PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Single from Whole Paycheck in July. Back of the fridge till now(September). 7.3%, no mention of grapefruit on the can. Pint glass @home. Very soft golden haze that's more like fog. Second pour gets it looking like yeasty endtrails. Thin, frail, eggshell head. Mostly grapefruit with a bit of apple & hay. Taste is super mellow earth, juicy pine, salt & barely lingering grapefruit pith. Bittersweet. Frothy, amble soft bubbles, but very light weight body. ABV feels small. Quiet. Beach ipa. Okay to good.

Taster pour from a can at Munchie Madness festival, 2022. It's a clear, bright, pale yellow with no sparkle, finger-width white foamy head with light lacing. Aroma is weirdly like a spent matchstick with bit of fruit and yeast. Taste is more traditional Kolsch with strong yeast and hint of fruit. Mouthfeel is light side of light-to-medium bodied with smooth texture, soft carbonation and finish as taste. Overall, the yeast is pretty clean without a lot of open-air funk (other than there was something weird in the aroma).

Foam draught, 8/13/22. Hazy, blonde honey. Just good old fashioned saison character. Is this a Fantome Ete clone? Because it sure smells like it. Plaster, mineral, funk, pepper. Pencil lead and plaster with soft, soft mm alta, very well-attenuated. Somebody has to have a strong grasp of saisons to make this. Immediately very impressed.

16 ounce can. Bright yellow gold pour. Small foamy white head. Fresh grainy malt aroma hints at cut grass and honey. Flavor brings notes of soft, sweet grain, lemon, honey and green apple. Light and refreshing with an inviting character that has one longing for more.

Can from explosivedog: pours hazy yellow with a huge frothy white head. Aroma is huge amount of herby, citrus, straw. Taste is dry with respect to the bitterness, but also has a rounded sweetness. Very spicy. Lingering earthy aftertaste. Quite good.

Can. Pours hazy gold with a big frothy head. Funk, blueberry, light butter, light herbal, pineapple. Lovely soft body. Outstanding.
