Description
WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Every time. Regardless of style. To us, that’s the variety worth cultivating. And that’s what we bring to your table.

On tap at the brewery. Pours a hazy peachy gold with a white head that dissipates to the edges and laces. Aroma has citrus and sweet onion with a bit of rind and melon supporting. Flavor has dank citrus and melon with a bit of rind and sweet grains coming through.

On tap at the brewery. Pours a clear gold with visible carbonation and a white head that dissipates slowly to the edges. Aroma has crisp hay and some grass with a light great straw underlying. Flavor has a nice grass and hay combination with a bit of light straw backing.

Can to tulip. Thanks Drew.
Appearance: dark brown close to black color with a two finger khaki head slowly dissipating to leave some messy lace
Aroma: semi-sweet coffee beans, cocoa powder sweetness, dark chocolate, biscuity malts, and a touch of dark fruits far underneath
Flavor: wraps up the prior noted aromas sweetly with an ample bitter backing and keen roastiness to round things out; quick aftertaste of the cofee bean sweetness and roastiness
Texture: medium bodied, good sipper, some roastiness gripping my tongue, sly finish of the coffee bean sweetness and roastiness
Overall: a very nicely done imperial stout very worthy of having again.

Can to tulip.
Appearance: copper/orange color with a quickly dissipating foamy white head, didn't leave much lace
Aroma: citrusy and piney hoppiness, clean biscuity malts
Flavor: bittersweet juiciness blending the hops and the malts, mild aftertaste of hoppy citrusy and piney juice
Texture: light to medium bodied, somewhat sessionable, juicy citrusy finish
Overall: nice enough DIPA I'd bang again.

Certainly not subtle with the passion fruit. Lots of tropical tartness mixed with a slight pineapple sweet streak. Tastes much more like a fruited wheat ale than an IPA. Dry finish helps, but not my thing.
