WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Every time. Regardless of style. To us, that’s the variety worth cultivating. And that’s what we bring to your table.
Can @ Højbjerg tasting. Nice head with good duration. Color is golden. Aroma and taste are earty hops, fruits, flowers, malt and has a nice bitter finish.
Can @ Saxo tasting. Hazy golden with a white head. Aroma is sweet, malty, fruity and moderate hoppy - fruity. Flavor is quite sweet and moderate bitter. Sweet and moderate bitter finish. 050621
This beer is a slightly hazed yellow-orange color with a medium white head that recedes gradually to an outer ring. Sticky strings of lace. Aroma of dank hops, citrus and malt. Medium body with flavors of herbal hops, grapefruit and roast malt. The finish is moderately bitter with a lingering citrusy hop aftertaste. Pretty good all around.
Excellent DIPA, fruity and well-rounded, offering up notes of melon, peach, pineapple, papaya, grapefruit, and berry, finished off by hints of apple, lychee, and lemondrops. Slight booziness in the fade with no bitterness. Tasty.
Golden, hazy with a medium white head. A tropical aroma with some orange and citrus sense. Medium bitter with a good tropical and orange Finnish. Medium / full bodied.
Very, very dry IPA, with a quick hit of grapefruit, passion fruit, and peach, followed up strong, lingering veins of pine and minerals, followed by an outsized, almost overpowering bitterness. Needs a little more malt to pad the hop vitriol on the back end.
So maple and sour aren’t all that compatible as it turns out. Makes for a weird pint; face-puckering citrus and berry, followed by gooey maple sweetness and vanilla, finishing with a tart, acidic finish. Doesn’t work.
Sweet but not overbearing, with plenty of milk chocolate, caramel, raisin, and some mocha latte, with cherry, molasses, and a little anise underneath. Finishes with a mild hint of booze. Not a classic, but enjoyable enough.
