Bottle picked up at the brewery. Soft haze on a medium orange gold. Very decent dense thin lasting white foam. Looks boss. Nose has lactose. Wheat. Soft oak funk. Some sweet peel. Light leathery brett. Touch of dessert apple. Taste is dry tart and light pithy bitter. Clean and dry on the palate with a bit of acidity. Foamy carbonation. Light tart zesty bitter finish. Good. More wild ale than saison style wise though.

(Cask at Cock Tavern, Hackney, London, 10 May 2024) Pale golden colour with foamy, white head. Fruity, malty nose with notes of peaches, orange, grass and wheat crackers. Malty, fruity taste with biscuits, citrus, peaches, melon, grass, ripe tropical fruit and mild citric/grassy bitterness. Light body, dry. Fresh, soft and highly drinkable. Nice one.

750ml bottle picked up at the brewery in April. Dunno if it’s been taken off sale since, but there’s no mention of this beer anywhere, that I can see. Bit odd. Fairly unimpressive pour sits hazed medium gold, with no head. Nose has light sweet Sherry notes. Wheat. Damp oak. Some brett. Taste is sweet up front with a light fruity sweet grape vinous tartness. A bit flabby overall with minimal carbonation. Wheaty sweet finish. Interesting enough, and a bold move, but as it stands it’s wide of the mark.

Can. A mild to medium haze on this gold beer, good bubbly pale cream colour head. Airy and semi dry palate, good fine minerally carbonation. Airy malts, a touch of grain, decent creamy sweetness. Whisper of esters. Soft cooling pine into modest modern Simcoe pineapple. Light floral tangerine and mandarin. Light and semi dry finish. Pretty decent representation of where Simcoe is at in 2024. Hops change character over time and very much over terroir. This is a pretty good profile.

Keg at the Taps, Beaconsfield. Black with a tan head and a bit of fizz. Fruity liquorice up front - apples and blackberries being the fruits. Not much evidence of the salt other than a savoury leather taste in the finish. I'm not a fan of liquorice and wouldn't have bought this if I'd known the brewer was aiming for a liquorice flavour - the description just said it was a sea salt stout. Nevertheless, it's still quite nice despite the liquorice.

750ml bottle picked up at the brewery. Hazed straw colour. Slim white foam lasts well. Nose has lemony brett. Wheat. Mineraly and yeasty. Taste is dry and lightly bitter. Light and crisp on the palate with lively foamy carbonation. Dry fresh bretty finish. Nice.

Can picked up at the brewery. Clear dark brown. Fine just off white foam. Notes of nutty dark chocolate and sweet fruit cake. Some peppery hop leaf. Taste has a nutty sweetness first getting robust with the leafy bitterness. Smooth and with nice body. Properly bitter finish. Ace.

Can picked up at the brewery. Light haze on a glowing gold. Very decent soggy lasting white foam. Mucky dank Simcoe. Bit leafy and grassy. Clean grain. Taste has light sweetness with sappy dank bitterness. Very drinkable with fine brisk carbonation. Nice bitterness to finish.

Can, picked up at the brewery. Also on tap at same. Mostly clear pale straw gold. Half decent white foam. Fresh lemony hop on top of sweet cracker malts. Whiff of sourness. A tiny bit estery. Taste has pretty clean lemony bitterness. Some sweetness. Easy drinking with rolling carbonation. Semi drying finish. Chugged good.
