Description
The Referend Bier Blendery practices the neglected art of waiting, of letting nature run its course, to produce a beer of depth and character inimitable through technological shortcuts or chemical interference. These beers are:
-100% spontaneously fermented
-no yeast cultures are added at any point in the process
-Fermented and matured in oak barrels
-neutral oak imparts little flavor and allows the beer to breathe
-Unfiltered, Unpasteurized, Unsweetened to sustain the beer's natural essence
-Built for posterity
-bottles are capable of decades of aging
-Acidic and complex (not basic.)

750 ml bottle shared by ClarkVV. Soft aroma of sour grain, lacto, dusty wheat. Flavors are lemon, wheat and brett with fruity and oak notes. Lactic sourness, slight tartness. Light to medium body, moderate carbonation, soft texture. Crisp. Perfect example of the style.

Level 42 Bottleshare. Thanks to Leighton. Hazy yellow gold beer, small pale cream colour head. Palate is airy, dry and has decent fine carbonation. Light tangy lemon, mild tartness. Elderflower tang goes well with a little lemon sherbet. Tangy finish produces a trace of orange. A mild mild acidic linger. Very drinkable.

Bottle shared in London - big thanks to drsandman. Pours clear yellow with a small, foamy white head. The nose holds tangy lemons, peach, slight sulphur, a little oak. Light sweet flavour with moderate, quenching acidity, some oaky dryness, white grape, lemon peel. Light to medium bodied with fine, spritzy carbonation. Tart, quenching finish, with more lemon, tangerine, a little tannin, more drying oak. Excellent beer.
