This year's batch of Savant Beersel began with a strong Belgian-style pale base beer fermented with a favorite strain of Brettanomyces and allowed to mature in red wine barrels for 12 months. We then blended the best barrels with fresh Norton grapes from our friends at Charleville Vineyards in Ste. Genevieve, Mo., and allowed it to referment to dryness in stainless steel for 3 months before bottle conditioning for an additional 4 months. The result is a celebration of Brettanomyces and Missouri wine grapes. Tart and bright grape and berry notes combine creating a bracing acidity over earthy funk and subtle caramel malt. The time spent in oak provides a gentle oak vanillin that softens the Norton's firm tannin. Concentrated and complex with lively carbonation. Bottle conditioned.

Bottle at Black Christmas 2018, vintage 2016, 2 years old
Hazy copper colour. Sweet and sour, with plenty of berry and stone fruit juice.
Excellent.

Sampled at Billie's Craft Beer Fest 2017 - day 1. Semi-hazy ruby pour with a tan head. Notes of cherries, vinegar, oak, light mould, some wine. Medium body, light oxidation, tart finish. Very nice.

Sampled at Billies craftbeerfest 2017. Thnx for sharing, everyone ! Don't mind my visual info to much, as lighting was really terrible. Pours rather clear amber. Smell is intense, sour, fruity, full, oak. Bit sweaty, mild fruits. Taste is sharp, intense FOB style. Bit bloody, but in a nice way. Tad fruity, some oak. Mild lactic acid. Very decent. Not sure if mis-tasted by me, or if the lactic acid was an infection, since they do speak of 100 % brett.

(Thank you!) Sampled 750 ml. bottle @ Billie's Craft Beer Fest 2017. Clear golden, white head. Nose is milky sour citrus, funk & USA glue sour. Taste is all puckering glue, acidic, pain, varnish, lemon glue. Acidic glue body. Too American paint thinner beer.

Clear orange to amber beer, small creamy yellowish head, pretty stable, non adhesive. Aroma: very fruity, funky, lambic, spicy, lots of brett, nice, impressive beer! MF: soft carbon, medium to light body. Taste: very acidic, way too sourish, lots of lemon juice, don't like.
