Belfius combines two of Belgium’s well-known beer styles: a spontaneously fermented ale and a saison. The spontaneously fermented ale is also known as our Coolship beer. The name comes from a key brewing tool—the coolship—that allows the beer to be inoculated with wild yeast and other microbiota. After inoculation, the beer ages in oak barrels for up to three years. The second beer in the blend is our Saison, a dry ale defined by its notes of citrus and peppery spice. Blended together, they create a golden beer with an herbal aroma that contains both spice and tart fruit. Its taste is one of restrained sourness rounded out by a hint of oak.

Citrus and grapefruit bretta. Hazy golden pour with decent head. Crackery bitter and tangy finish. Nice stuff, very pleasant. A little lemon. Bottle pour at Sovereign.

C&C 375 mL bottle from Beer Run, 5/9/21. Rating as many different states in a row as I can without repeats. Starting on 5/4: IL, CT, NY, VA, TN, IA, MN, AZ, OH, FL, NM, MI, TX, CO, CA, MO, MA, MD, WI, VT, NC, and now ME. Bottled 12/21/17. Cool. Hazy orange, thin head that doesn't last. Aroma of apricot, stone fruit, apple, hints of funk. Taste is bready malt, apricot, citrus. Mild funk. Mild lingering tartness, well balanced, Aged well. Moderate carb. Nice beer.

Pretty cloudy blond beer, small creamy irregular off-white head, little stable, falls down quickly. Aroma: funky, lemon juice, acidic, lots of brett. MF: very lively carbon, medium body. Taste: very acidic,lemon juice, soft bitterness, some tannins. Aftertaste: dry, sourish, citrus, fruity, soft acidity, lovely stuff!

Bottle shared by Marcus. Pours bright gold with a white head. Aroma is light fruity/grassy - the fruit being pale stone and white berry. Near med body. Flavor starts moderately funky, a bit sour, some sourish peach, and some definite barnyard in the finish. It’s moderate everything, but the thing is greater than the sum of the parts. A very nice, arguably right on style, saison. Excellent.

Pour at State of Origin 2018. Lovely funky, barnyard nose with wet hay, pear, apple and lemon aromas. Some grassiness and more barnyard notes on the palate. Soft stone fruit notes, some peppery phenols as it warms. Perfect carbonation and great mouthfeel. Lingering pils-like malt with tart citrus/young muscat flavors. Light tartness and peppery notes. Everything I like in a saison.

Shared bottle. Pours hazy yellow with a tiny white head. Aroma and flavors of tart fruit, funk, oak, bit of barnyard. Good.

March 30, 2014 bottle drunk 1/18/18 at Publick House.
Clear, blonde-maize-golden with a thick, small, white head atop showing strong retention.
Light acetic, strong wheat and moderate lactic acidity also finds notes of light orange water, grainy cereal, peach and apple. A very complex and refined nose, with the aging having produced even, fruity, somewhat intense aromatics and zero oxidation or off flavors. No overworked Brett or excess souring bacteria and while it's lightly oaky, it's in the best way possible, with no toast or astringent characteristics. No alcohol or flaw. More of a sour at this point (maybe it always was) but the lagering has made it on par with the best American sours and it shows none of the punchy, young, unrefined crudeness that so many do.
In the mouth it's quite tart, yet soft, malty and dry with apple, peach, lemon and moderate lactic acidity. Strong wheat-like character with light, bright, poignant acetic acidity that is gentle and balanced. Very fine carbonation completes the picture and there is no alcohol or flaw. Approaching lambic-like levels of acidity balance and homogenity with light oak and soft, sweet malt. Has aged wonderfully and still has a good cereal, wheat and grain character that gives it a refreshing, drinkable edge. Very, very nice.

At Threes on draught: pours lightly hazed gold with a white head. Aroma is bretty and lightly fruity and floral. Taste is tart, spicy, fruity. Pretty solid saison. Very easy.

Bottle from the Bodega. Hazy bright orange color with a pillow-y white head that persists. Spicy earthy funky citrus on the nose with bits of stone fruit. The flavor follows the aroma adds a bit of green apple. Not too shabby.
