Dark version of Fantôme's earlier Forest Ghost so almost by definition a dark saison, 75 cl bottle with crown cap, from Être Gourmet. Very thick and rocky, pale greyish beige, cobweb-lacing, large-bubbled but stable head, murky and 'dirty' chestnut brown robe, very dark with thin ochre edges. Aroma dominated by a very strong ethereally spicy scent best likened to eucalyptus (as used in green cough syrup), strong clove and even a touch of peppermint, impressions of rosehip tea, soggy brown bread, elderberries, damp earth, dark green tree leaves, sweet cicely, spice cookies, apple peel. Estery onset, fizzy carbonation, sweetish with fig and plum notes drenched in a chestnutty, soggy maltiness, very bready and a tad soapy, nutty, with growing and eventually very strong ethereal cough syrup and Glühwein spiciness, again with eucalyptus overpowering even the clove- and peppermint-like aspects, literally opening the sinuses; touch of refreshing orange peel in the end as well, damp earthy and yeasty phenolic notes, late and leafy, effective and well-placed hop bitterness trying to tie all these aspects together - and barely managing just that. Peppery traces in the end. Classic Fantôme weirdness, my girlfriend wasn't too crazy about it, but for me it works - though that very strong eucalyptus-like aspect, even if it sets this beer apart even from other bizarre Fantôme concoctions, was obviously not necessary. Still, the flavours do come together in the end so regardless of the unusual combo of spices, I was able to enjoy it and had no issues finishing (more than) half of the bottle. One of the more interesting Fantômes I had in the past years, for sure.

Bottle - exploded upon opening - pours murky brown white head - nose and taste of banana, spice, clove, dark wheat malt and cocoa - medium body One of the worst bottle explosions I've had - ended up with about 4 ounces out of a 750ml bottle in my glass. Rest was on the floor.

750 ml bottle. The beer is a orangey brown color. Completely hazed through. Rocky beige head. Gushed all over on me upon opening. The aroma is baking spices, cider, doughy malt and some fruity lemony action. Some light caramel. Lots of cider. Restrained phenolic action. Taste is drier than expected. Quite appley again. Light bitterness. Some toasty malt sweetness. Light feel. Effervescent carbonation. Some It’s not as full and funky as the best Fantome but it’s nice and enough and still has that Fantome uniqueness.

750ml bottle. Massive foamy off-white head. Unfiltered brown amber body. Dry, aspirin tones, but still has some brown malt tones. Almost a salted caramel feel. Earthy. Not that impressive.

Poured from a 750 ml bottle. Aroma is fairly malty with quite a bit of caramel as well as some lighter notes of toasted bread, nuts and dark candi sugar. Some light fruitiness with raisins, figs and cherries. Some light banana and bubblegum esters with pear and red apple as well. Light phenolic notes that are a bit grassy. Pours a copper brown with some dark amber hues and a medium sized, fairly thick, tan head that recedes slowly but steadily to the edges where it lingers. Light lacing and no legs. Flavor is fairly malt forward with some toasted bread, caramel and hints of candi sugar and rye. Light to medium light acidity with some citrus notes. Fairly strong fruit esters with banana, red apple, pear and stone fruit. Light grassy phenolic notes with a bit of a floral character. Medium to medium light bitterness. Red apple and pear are the strongest esters. Mouthfeel is medium light bodied with medium to medium high carbonation. A touch watery. Low astringency and low alcohol warmth. Overall, an alright beer, but the aroma works better than the flavor. The malt profile is a bit washed out and watery in the flavor and it can’t support all the esters.

Taste comprises biscuit crumble, yeast esters, earthy berry fruit, light malt base, spice, grains, straw. Medium bodied, fine carbonation, semi drying close. Average Belgian stylee.
