Rolling Palace is now our IPA series. Same base beer, different dry hop.
Number 7: Callista. A tenuous reference to Ally McBeal aside, 'Callista' means 'Most Beautiful' in Greek. This hop is a hybrid of Hallertau Tradition and Huell. Fruity, citrusy, and quite deliciousy. This is - of course - the organic version, so arms and legs were sold to acquire it in such abundance.
100% Organic, 100% Most Beautiful

Can from Westhill Service Station. It pours clear golden - blonde with a small, fluffy white head. The aroma is fresh, sweet, quite juicy, rather bright raspberry, pomegranate, watermelon, grapefruit and mango. The taste is crisp, dry, firm, fruity action, pithy, zesty, waxy rind, pink grapefruit, watermelon, peach melba, floral accents, light tannin and some peppery spice with a drying finish. Average body and fine, prickly carbonation. Interesting hop character but lacks some clarity/vibrancy. Decent, but the best in the series.
