After scaling up our G&T Gose recipe to a higher gravity and increasing the additions of botanicals, we aged it for three months in third-use barrels that once housed our Bourbon Barrel Stout. The resulting beer is truly unique and complex: the deeply charred barrels impart a notable “bourbonesque” hue to its appearance, while hints of vanilla and oak give balance to the botanicals leading to a soft bourbon flavor up front and a juniper-like finish.

Draft at beertemple. Aroma of sweet herbs, vanilla, cream and salt. Taste has creamy bourbon vanilla, oak, caramel, salt, lime and some malt. Really one of a kind, very nice.

22 ounce bottle into tulip glass, no bottle dating. Pours lightly hazy deep golden amber color with a 1-2 finger dense and rocky white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big tart lemon, lime, red/green apple, pear, white grape, white wine, gin, juniper berry, sea salt, vanilla, bourbon, toasted oak, wheat, cracker, honey, hay, herbal, and grass; with light notes of pepper, coconut, spruce, lacto funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/acidic yeast, salt, spices, bourbon barrels, and moderate pale malt notes; with great strength. Taste of big tart lemon, lime, red/green apple, pear, white grape, white wine, gin, juniper berry, sea salt, vanilla, bourbon, toasted oak, wheat, cracker, honey, hay, herbal, and grass; with light notes of pepper, coconut, spruce, lacto funk, and yeast earthiness. Light-moderate lactic tart/sourness and light yeast/juniper/oak spiciness on the finish. Lingering notes of sour lemon, lime, red/green apple, pear, white grape, white wine, gin, juniper berry, sea salt, vanilla, bourbon, toasted oak, wheat, cracker, honey, hay, herbal, grass, light pepper/funk, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/acidic yeast, salt, spices, bourbon barrels, and moderate pale malt flavors; with a nice malt/tart/sourness balance; and mildly increasing pucker after the finish. Fairly crisp finishing. Light-moderate increasing dryness from tart/sourness and juniper/oak spiciness. Medium carbonation and body; with a very smooth, moderately bready/grainy/acidic/saline, and fairly tannic balanced mouthfeel that is great. Zero warming alcohol for 6.5%. Overall this is an excellent barrel aged Gose. All around great complexity, robustness, and balance of fruity/acidic yeast, salt, spices, bourbon barrels, and moderate pale malt flavors; very smooth, crisp, and easy to drink; with the modestly lactic/tannic/drying finish. Has a more flavorful malt body than the base beer with the higher ABV, but is also more lactic/acidic. Better Gin botanical presence, and great overall barrel integration. A very enjoyable offering, and spot on style example.

Bottle. Pours lightly hazy golden, medium white head, dissipates to nice residual and lacing. Aroma is light, lime zest, sea air, hints of oak. Flavor has strong oak tannin, vanilla and buttery notes along with a light tartness and pinch of salt. Medium light body. Interesting concoction.

Keg at Brewdog Farringdon. This is a darn fine beer, highly unsusual. It is lip smacking sour and there is a lot of gin and tonic coming from it. Much more exciting than a similar Beavertown project one I had which was also delicious. Long may gin and t combine with beer.

Draft pour at Snallygaster 2017. Poured a clear golden color with a small foamy white head. Aroma was light tart notes, some grain. Very mild lemon, salt, some additional spices. Light soapy notes. Floral, herbal spices. Light barrel. It wasn’t refreshing and the flavorings just didn’t meld well with me compared to the other gose beers I’ve had from them.

Keg at BD Aberdeen. It pours hazy orangey amber with a small white head. The aroma is big oaky vibes, vanilla, marshmallow, salty, fragrant, limey, peppery juniper and lactic notes. The taste is crisp, dry, tart, salty, lemon - lime, lactic, vanilla, peppery juniper, tonic water, limeade, pithy, sherbet with a drying finish. Medium body and average carbonation. Well rounded and quaffable stuff. More I drink of it the better it gets.
