Dry Cider. Still.
All the sourness, bitterness, acidity and astringency you would expect from a fully fermented dry cider. Perfectly balanced, so easy to drink and great with cheese and roast pork.

500ml bottle. Orange golden colour, no head and aroma of tart apple, woody, oak, funk, leather, rubber. Taste is dry tangy apple with barnyard, woody, leather & rubber notes, and earthy drying tannins. Quite sour, medium bodied, no carbonation, very dry tannic finish. Abit harsh, but OK.

Draft @ Beer in Hand, Hereford. I hope this is the same as the bottled version rated below. This is uncharacteristic Olivers to me, its flavour presenting a very thin and dry blend with a coarse woodiness and gum-sucking dryness without any of the trademark fruitiness that Tom has perfected over the years. Mind you, in this kind of place that’s precisely what the locals want I expect.

Bottle @ The-Fest in Woosta.
Slight wink of carbonation. Pale, yellow citrus soda.
Twangy, cored, floral, flinty nose.
Tastes like hard water. Unintended flash of carbonation. Apples seem secondary. Bitter acid apples. Gently sour. Pith. Like drinking from a can. Sharp, woody & iron finish.
A kidney stone in every bottle!

Bottle @ home, picked up at Wilbur’s Foco. Clear, light yellow appearance with no head and no notice of carbonation. Light oak, straw, somewhat grassy, somewhat yeasty, a bit bready, dry apple aroma. Actually, pretty sweet apple, somewhat funky, a bit juicy, light oak/tannin, fairly tart flavor. Fairly refreshing but a bit juicy and the interesting notes are pretty mild. Kind of reminds me of some homemade ciders that I’ve tried in Europe.

Bottle. No noticeable carbonation when the crown is popped. Spanish style sidre pour yields minimal carbonation (no sediment left on the bottle either). Crystal clear, somewhat deep golden yellow hue. Negligible legs on the glass. Funky aromas, cheesy (like hops aged for lambic), some sulfur, minerally, some bright fruit notes, berries, earthy, leathery. Funk character borders on chlorophenolic at times. Sandalwood, damp leaves, light oak character. Flavors are medium sour, lightly astringent. Tannins are medium to full. Completely still bodied (odd, considering all the other still products that I have had from this cidery have been in corked 750mls). Funk level is close to Spanish levels, but sourness is a bit more muted. Phenols are medium to slightly harsh (medicinal, normandie band-aid, strong leather). Flavors still very reminiscent of fall with the damp leaf and rustic components. Completely still, somewhat thin. Rustic and unique. I think carbonation would be preferable on this. Interesting for sure.
