As stout ages, Goose Island’s brewers often observe a range of fruit expressions that emerge from the barrel and from time itself. Inspired by the flambéed dessert classic Cherries Jubilee, 2025 Bourbon County Brand Cherries Jubilee Stout captures the essence of cognac-soaked cherries and caramelized citrus.
The beer began its aging journey in freshly emptied bourbon barrels, which impart rich layers of oak, warm vanilla, and subtle baking spice. It was then finished in cognac barrels, adding elegant notes of dried fruit and contributing to a rich, full mouthfeel.
Following the aging process, the stout was blended with Montmorency cherries, citrus, and panela–resulting in a velvety, decadent beer with flavors of candied dark cherry, soft vanilla, and a caramelized citrus finish.

CBJ Tasting. Aroma has molasses and booze and dark fruit. Dark and glossy. No head. Boozy wi5h molasses and dsrk fruit. Medium bodied. Slick. Soft-fizzy carbonation. Long astringent finish.

Tasty, decently balanced, but certainly rich, boozy, some dark chocolate, berries, cherry perhaps. Somewhat understated for the heft, in a good way. Very drinkable.

Bottle share at CBJ. Thanks to me. Near opaque dark brown beer, no real head. Airy palate, fairly dry, decent fine carbonation. Somewhat thin dark malts, a light but pleasing dark chocolate streak. Some alcohol spice. A light and slightly ripe cherry steak. Airy and semi dry finish. Light spicy linger. Goes down pretty easy but, I am struggling to understand why this is getting hyper rates.

Smooth, slightly sweetish and roasty with some bourbony vanilla, oak, cognac, licorice, hints of chocolate sauce, faint hints of cherries, prunes and toffee syrup. Quite elegant, complex slow sipper. Surprisingly balanced and tasty

2025 bottle from Livonia Liquor. Pours a deep brown to black with a bit of tan head that lingers, then dissipates. Lots of dark chocolate, vanilla, bourbon and of course cherries on the nose. Palate is very similar with a nice cherry cordial dark chocolate note going on. Thick and viscous on the palate with lingering oak, bourbon, cacao and vanilla on the finish. Killer stuff!

Bottle shared at tasting. Opaque black color, virtually no head. Aroma and flavor are malts, soft roasty, soft soy sauce, a bit boozy but as expected, barrel influence, sweetish a bit and nicely bitter, subtle cherry notes. Awesome beer. Awesome. How do they do it. Absolutely delicious.

Surprising; normally I don’t care for cherry stouts, but BCBS Cherries Jubilee hits just the right balance between sour cherry sweetness and imperial stout richness, offsetting the fruity middle with deep veins of bittersweet chocolate, anise, oak, and bourbon. Finishes with a lingering bourbon booziness. Lovely.
