As stout ages, Goose Island’s brewers often observe a range of fruit expressions that emerge from the barrel and from time itself. Inspired by the flambéed dessert classic Cherries Jubilee, 2025 Bourbon County Brand Cherries Jubilee Stout captures the essence of cognac-soaked cherries and caramelized citrus.
The beer began its aging journey in freshly emptied bourbon barrels, which impart rich layers of oak, warm vanilla, and subtle baking spice. It was then finished in cognac barrels, adding elegant notes of dried fruit and contributing to a rich, full mouthfeel.
Following the aging process, the stout was blended with Montmorency cherries, citrus, and panela–resulting in a velvety, decadent beer with flavors of candied dark cherry, soft vanilla, and a caramelized citrus finish.

Poured from a 500 ml bottle.
Aroma is rather fruit forward with lots of cherry notes and hints of raisin and prune. Fairly strong chocolate, dark caramel and toffee notes. Some tootsie roll notes with hints of dark chocolate, orange, treacle and burnt sugar. Medium light bourbon and alcohol notes with hints of oak.
Pours jet black with a thin, moderately large, reddish-mocha head that recedes quickly and disappears. No lacing and sheets for legs..
Flavor is fairly sweet with lots of chocolate notes and some lighter roast and burnt sugar. Quite a bit of dark caramel, toffee and tootsie roll notes. Moderately strong cherry notes with hints of raisin, prune and orange. Moderate bitterness and medium alcohol notes. Light bourbon and faint oak notes.
Mouthfeel is full bodied and a bit sticky with medium carbonation. Low astringency and moderate alcohol warmth.
Overall, a solid BCBS and one that tastes far better than I was expecting. The cherry notes were pretty strong in the aroma, but we're much softer in the flavor and made for a nice chocolate cherry note. Alcohol is fairly well hidden and not too hot. Decent bourbon and cognac notes.

Bottle from Left Field Beer. Nasal tingling aromas of dark chocolate, nuts,black cherries, bourbon, black treacle, toffee, red grape, definite Cognac notes. Boozy oaky mix of the above, underlying coffee notes. Soothing alcohol warmth. Slow sipping loveliness.

Bottle: Poured a pitch-black color stout with a small dark brown foamy head with some retention and some lacing notes. Aroma of chocolate notes with some bourbon notes with cherry notes more dominating then expected. Taste is also a mix of chocolate notes with some bourbon notes and some cherry notes with residual sugar notes. Body is full with an oily texture and good carbonation with no real discernible alcohol notes. Enjoyable but the cherry notes are too strong.

A deep dark stout with no head. In aroma, sweet fruity chocolate malt with dark fruits, licorice, cherry, alcohol warmth, very nice. In mouth, a nice sweet fruity chocolate malt with dark fruits, licorice, cherry blossoms, alcohol warmth, very nice.

Opaque colour and no head. Berryish aroma, vanilla, cherries - no so strong. Medium-bodied. Smooth. Toasted, vanilla, light sweet cherries, soya, very mellow. Alcohol bite in the aftertaste. Nice.

Dark brown. No head. There's a nice rich umami note on the nose, a touch of cherry, with lots of dark bitter chocolate. Similar palate. The cognac hits in the finish, bringing a bit of fruitiness and dry vinous character. Dry, complex, nice malt richness. This is excellent.
