Silencio is a sour black ale artfully aged in Kentucky Bourbon Barrels. The addition of Madagascar Vanilla Beans and El Silencio Coffee from local Mountain Air Roasting culminates in a complex and elevated sour ale.

Bottle at home. Pours black with quite a bit of head, this dissipates quickly though, leaving only a small rim around the glass. Aroma is very intense and complex. A lot of sour aromas, cherries, barrel/bourbon themes, some dark malts. Hints of vanilla. Mouthfeel is acidic and wholesome. Flavour is complex and wide; dark malts, sour cherries, citric acid, vanilla, some coffee hints, a lot of bourbon notes from the barrel. Finishes warming, sour and with a lot of bourbon. Amazing beer, fantastic sour.

Dark brown. Red hues. Tan head. This smells stupid. It’s like a finely tart ale worth blackberry and vanilla. It’s a sour stout? I even get whiskey. Whoa. Coffee, cocoa, vanilla, booze with sour cherry. Excellent work. Not too sour

Half liter bottle from Julio’s. Dark brown, thin creamy tan head, fair retention. Aroma of roasted malt, vanilla, chocolate, coffee, oak, hints of lemon. Taste is tart lemon, funk, coffee, chocolate, bourbon. Medium bodied, bright.

Sample at the Funkatorium. Dark brown color with a medium foamy tan head that diminishes gradually to an outer ring. Small patches of lacing on the glass. Aroma of coffee, vanilla, oak and tart fruit. Medium body with flavors of oaky vanilla, roast coffee, cherry and malt. The finish is roasty coffee and tart fruit. Pretty good overall.

Draft at Wicked Weed Funkatorium, Asheville, NC. Dark brown, beige head. Aroma of bourbon, coffee, and toffee. Taste is bourbon, coffee, toffee, vanilla. Sour finish.

Bottle split at CBC Islo, thanks to Paddy Goldberg, 07/07/16. Off black with a decent tan covering. Nose is coffee grinds, light soy, earthy fruit peel, airy malts. Taste comprises more coffee grinds, vanilla Angel Delight, butterscotch, fruit tang, mellow bourbon edge, toffee. Medium bodied, fine carbonation, semi drying close. Interesting offering, a little all over the place and not overly sour, but one I could sip on.

Bottle shared at Craft Beer Co. Islington - London. Many thanks to Manny G. Pours hazy brown wit a frothy, white head. The nose holds butterscotch, light tangy berries. Light sweet flavour with mild acidic bite, artificial chocolate, earth. Light bodied with average carbonation. Finishes with moderate acidity, more phony cocoa, vanilla, woody tang. Disjointed. So so.
