Silencio is a sour black ale artfully aged in Kentucky Bourbon Barrels. The addition of Madagascar Vanilla Beans and El Silencio Coffee from local Mountain Air Roasting culminates in a complex and elevated sour ale.

Dark pour from bottle not much head. Smells of coffee and vanilla and a bit of yeast. Malt, tart sour, coffee oak.

Taster at 2024 FoBAB. Category: Wild Beer Mixed Culture (acidic). This version is listed as ABV 9.1. A dark Porter color with not as much legs as my previous sampled porter. Slightly tart nose is still pretty pleasant. Not a very tart taste but the then it builds, and seems to linger. The alcohol is not very obvious, but I am sure it's coming to hit me. Settles out like a soured lager beer.

Perhaps one of the most unpleasant flavor combinations I've come across. Complex, sure, but the clash between acidic coffee, uber-tart citrus-berry, vanilla, bourbon, and oak leaves me reeling. Couldn't finish a 4 oz. taster. Not my thing.

Refrigerated 0.5 L brown into a cup. Dark brown with medium beige head. Aroma is coffee, medium body, medium carbonation, and little lacing. Taste is tart and coffee.

Can from Saveur Biere. Black with a tiny brown head. Aroma is sweet, malty, roasted malt, tart, wood and bourbon. Flavor is quite sweet and rather acidic. Dry and moderate acidic finish. 210119

Keg at the beer temple. Pours black, nose is funk, oak, liquorice, taste is tart, blackberry, oak, funk.

On tap at Multi Qlti, pours a deep dark amber brown with almost no head. Nose brings out heaps of vanilla upfront, followed by coffee and tart red fruits. Flavour is unusual, with vanilla, tart red fruits, and balsamic. Acetic and lacking cohesion. I'm not too impressed with this. It's okay.

Bottle thanks to Kurt~! Pours slightly hazy chestnut, medium tan head, dissipates slowly, good lacing. Aroma is bourbon, vanilla, oak tannin, cherry, oranges. Flavor is light tart, lightly funky, vanilla, cherries. Medium body.

500ml bottle purchased online from Brewdog, before WW sold out. Pours black with a thin disappearing white head. Mental aroma, it really messes with the head. Sour cherries, bourbon, wood, some vinegar a la the Flanders Red style. On the taste, it’s wonderful complex myriad of flavours, subtle tart acidity, dark malts, vanilla, bourbon, more sour cherries. Light/medium bodied with a tart, dry finish. Possibly a wee bit unblanced but there is so much going on that’s entirely forgiveable. It’s fabulous
