The move to barrels allowed development of the wonderful and unique characteristics Brettanomyces bruxellensis offers. Once we were happy with how the beer developed, we blended it with fresh Snarling Badger, our Imperial Berliner Weisse, refilled the original four barrels and an additional 11 barrels and then allowed all 15 barrels to age and develop. Some of the 11 barrels had previously held red wine and have only been used once before this to age beer. These barrels have added flavors found in wine and allowed the oak tannins and dark fruit sweetness to balance with the sourness of the beer.
This beer will age well for years, as it will continue to develop unique flavors from the various yeasts and bacteria with which we chose to ferment this beer. We hope you enjoy it as much as we do.

11.2oz bottle at share, 2014 vintage. Hazy pale golden pour wit a small bubbly head. Fruity aroma, tart, brett. Taste is grapes, berries, brett funk with some nice oak-y notes.

11oz bottle. poured into a bowl. cloudy, nearly opaque yellow-amber color with no head. Aroma is medium in strength and comes across as oaked vinegar and sweet tarts. The taste is more sour oak with a cheek puckering astringency. Palate is full. Seems this beer is sour just for sours sake, pass.

Bottle. Pours hazy pale gold with a small white head. Aroma and flavors of tart apple, white wine, funk, oak, vinegar notes. Nice.

12oz bottle pours a pulpy orange with a ring of white head. Nose has passionfruit, pomegranate vinegar, lemon rind, wet wood. Flavor is tart with vinegar, a little grapefruit juice, passionfruit. Tart and oily finish.

[1/29/17] Bottle/Can/Crowler/Growler at the RateBeer award ceremony bottle share at Flamingo Hotel in Santa Rosa. Spicy, wood, sour fruitiness, a bit of vinegar. Medium-bodied.

Tap at GABF. Pours a clear orange with small off white head. The aroma is funk, oak, sour fruit. Thin body, funky, lemon, oak, nice tartness, good.

Bottle poured. Much thanks to Chris for the share. Cloudy golden pour with an active fizz head. Citrus and Brett forward aroma. Refreshing green apple flavor with a soft grapefruit and lemon. No alcohol to speak of, even with the 8.5% tag. Juicy finish. Delicious.

11.2 oz. bottle, pours a cloudy golden with a small white head. Aroma sort of smells like farts, with earth and oaky funk. Flavour isn't as strange, with oak barrels and some dry stone fruits. Not the most complex beer, but it works decently. Fine.

Bottle - Lots of sweet grains and some honey. Clear gold with a small white head. Soured apple, nice tartness and a long bitter finish.
