A JP collaboration with Celina Tio, Chef/Owner of JULIAN and The Belfry in Kansas City, MO.

Chef Tio and I designed this beer together through a running series of texts while planning a beer dinner we would hold at her place in Kansas City.

Wandering conversations detailing layers of flavors flew fast and jumbled through the ethersphere.

I think we will become great friends – I wrote.

And we did.

She came to Dexter and we brewed this beer together.

Laurie jokes and now insists Celina and I must be long lost brother and sister.

Enjoy this beer!

Cheers & Mahalo plenty!

Draft at As Is. Murky yellow-orange. Heavy lace from an off white head. Heavy wood and spice. Light fruit. Feels kinda disconnected on the aroma, but comes together well in the flavor. Nice.

750 mL bottle. Hazy lemon-orange, large fizzy white head, good retention, tiny dark floaties. Aroma of pale malt, tamarind, cactus fruit, white pepper, mango. The taste is tropical fruit, apple, lemon, pepper, hints of brett. Medium bodied, low carbonation, bright. Nice.

Blend 1: Bottled 05/15/15 Super hazy golden and copper coloured body with an orange glow and a thinnish, single centimetre tall light off-white head that fades relatively fast. Aroma of sour grapes, lemons, brett, funky yeast, grass, herbs, flowers and way more mouth-watering sourness - very nice smell for sure, and complex just there! Light-bodied; Assertive sour flavours at first with a ton of brett and funkiness along with some subdued grass, herbs, caster sugars, yeast, biscuit flavours and then finishes with some incredibly smooth and nice passionfruit and tropical fruit sweetness, sourness and overall complexities - very nice. Aftertaste shows a lot of complexity with just the brett and yeast strain, but the addition of the tamarind is noticeable here along with guava and some nice fruit and sour sweetness - this one finishes nicely. Overall, a very nice and incredibly complex and robust beer with a lot of fruity notes, a good sour and sweet quality and the brett/yeast which make it great. This was great to sample and well worth trying to find or secure a bottle of this for extra aging - if I can find it again, I’d buy a few - this is a sublime beer. I sampled this 75 cL bottle purchased from Merchant’s in Dearborn, Michigan on 24-July-2015 for US$13,99 sampled at home in Washington on 06-December-2016 a day before leaving back for Dearborn. Bottled: May 2015 // Purchased: July 2015 // Sampled: December 2016

Sample at the Ann Arbor brewpub. The beer is a hazy straw color with a thin white head that burns away steadily to a film. Short strings of lacing. Aroma of citrus, yeast and malt. Light to medium body with flavors of grapefruit, funky yeast, oak and malt. The finish is fruity with a citrus and yeast aftertaste. Pretty good overall.
