On a trip to Kyoto, liquor wholesaler Motoichi Ozaki had a dream in which he saw a hawk soaring toward the heavens. When, in 1914, he bought a sake brewery in Yuzukami that was near bankruptcy, the dream remained in his mind, so he decided to sell his sake under the name Tentaka, or "Hawk in the Heavens." Tentaka brewery is nestled in the east end of Nasu Nogahara, in a town called Yuzukami. Surrounded by rice fields and mountains, the air and water are clean and fresh. The area is surrounded by three flowing rivers and has managed to avoid tourism. Eighty percent of Tentaka Shuzo's saké is sold in Tochigi Prefecture where they are located. It is brewed with water drawn from an underground stream that originates in the Yamizo and Nasu mountain ranges. Tentaka Shuzo's annual production is 350,000 1.8L bottles and they have no intention of increasing their production. Tasting Notes: A mature well-rounded flavor with a settled fragrance. Dry but with an underlying richness. Drier and lighter when chilled, and a bit fuller as it warms.

Nose is fairly umami with some salinity and light coconut. Drier notes of biscuit and light fruit with no alcohol noted.
Soft, moderately sweet, biscuit, banana-coconut and salty umami. Light alcohol dryness and lingering honey. I like it more than Ernest did.

Sake flight at Now & Zen, Charlottesville. Clear. Nose is floral, rice, light fruitiness. Flavor is floral, rice, vanilla, lightly fruity. Not bad.

Second Sake of the night at the Indra - Cider, Sake and Mead tasting 8/31/07. Pour is nearly clear water. Perhaps a twinge of yellow, but really hard to distinguish from water. Aroma of powerful rice alcohol much more forward than previous Sake Aroma I have experienced. Some banana fruitiness in the flavor, though mostly over powered by the alcohol.

Nice rice wine, butter, soy sauce and alcohol aroma. Light yellow color. Initially very waterlike then rice and soy flavors gradually come out and finishes with a mild alcohol burn finish. A fairly subtle and clean tasting sake - well balanced with no flavor coming out too strong.
