Sweet sparkling Junmaishu dry-hopped with "Tardif de Bourgogne" hops.

Rice polished to 65%, and the unusual addition of white koji to our 6-stage mashing process ferments to a refreshing, sparkling sake to be enjoyed throughout the year.
Doubling early mashing stages also yields a lower alcohol content to 12%.
Awashizuku’s sweetness balanced by the white koji’s acidity are sure to delight sake and wine lovers alike.

300ml bottle. Clear pale pinky orange. Aroma is floral, leafy hop, melon. Taste initially sweet and fruity, melon, pear, leafy hops, some booze, fairly dry finish, none of the bitterness the others mention. Spritzy carbonation.

NOTE: ABV given as 12% on the front label, but the rear label (James Clay import) says 10% which I assume is what the other raters are referring to. I'd like to think the brewery knows better than the importer though! The non-hopped version is also 12%

15/9/2023. Bottle shared by danlo, cheers Ed! 10% abv. Pours clear bubbly slightly pinkish. Aroma is hoppy, citrus, leafy, rice, melon. Quite sweet with moderate developing bitterness. Medium body, oily, sparkling carbonation.

300ml bottle from HOTM. 10%. Clear pale pink golden colour, short-lived fizzy white foam head and aroma of rice, floral fruity, hops. Taste is tangy, fruity, astringent hop, with some rice, and earthy booze. Medium bodied, spritzy carbonation, dry astringent bitter finish. Quite OK.
