Seit Erfindung der künstlichen Kühlung durch Carl von Linde in den 1870er Jahren kühlen Brauereien ihre Biere in Kühlhäusern oder Kühltanks. Das Graser Felsenkellerbier wird heute wie vor Jahrhunderten ohne künstliche Kühlung in den historischen Felsenkellern unter der Brauerei gelagert. Bei einer konstanten Umgebungstemperatur von 8 bis 10°C reift es gleichmäßig bei gemäßigter Kälte, was für einen besonders ausgewogenen, feinen und malzaromatischen Geschmack sorgt.

Bottle from the source. Hazy golden amber color, thin white head. Aroma of lightly spiced butterscotch. Flavor has lightly toasted caramel, subtle citrus, minimal bitterness at the finish. Decent.

500ml bottle. Minimally milky, amber colour with average to huge, fluffy, moderately lasting and lacing, white head. Slightly bready and minimally toasty, pale malty and minimally grassy, hoppy aroma, hints of bread crust, some protein, whiffs of peanut. Taste is slightly bready and minimally toasty, almost a tad nutty, pale malty, slightly caramel malty and mildly bitter, grassy hoppy, hints of caramel, some toffee, bread crust, some residual sweetness, some protein.
Creamy-watery texture, smooth and soft, almost a tad slimy, minimally cloying palate, medium, dense, lively carbonation.
Nice malt flavours, sadly a tad overcarbonated - decent.

Cask at Zum Franziskaner, Stockholm. Clear paleish amber, firm, creamy head. Floral honey and doughy grain up front. Sweet with medium body and velvetty soft mouthfeel. Bread, honey and grass. Mildly bitter finish.
