Das Maischeteigen, ein besonderes Maischverfahren der alten Bamberger Brauer, gibt dem Bamberger Braunbier seinen charaktervollen Geschmack. Früher gab es dafür im Läuterbottich sogar eine eigene Vorrichtung: den Pfaff. Darüber konnten die Brauer die Maische von unten mit Wasser benetzen. Entsprechend dieses Verfahrens wird die Maische sorgsam gewässert und darf anschließend einige Zeit ruhen. Die Maische quillt im Wasser auf und wird zu einer Art Maischeteig. Durch die lange Einwirkzeit werden besonders viele Inhaltsstoffe der Maische gelöst und sorgen im Bier für volle, würzige Aromen.

500 ml bottle from the Schlenkerla webshop, bb 10/26. Copper body, with a big, creamy, beige head.
Aroma of dark bread, caramel, grains, smoked wood, some citrus. tastes similar, with more cereals.
Quite creamy mouthfeel, with an average carbonation. Finishes quite dry, slightly sweet, wooden, a bit smokey, bready, cerealic, a bit citric.
Rustic and quaffable, with dark bready notes, some typical Schlenkerla smoke, while also some aromatic hop notes. Great characterful Dunkel!

0,5l bottle at home shared by Saeglopur. Bb 10/2026. Reddish hazy color, small white head. smells caramel, herbal, light smokiness, chlorophyll, earthy. Nice smell. Medium body, soft carbonation. tastes earthy, caramel, spices, peppery, tobacco, herbal, rye. finishes dry and light to medium bitter with notes of spices, caramel and earthy notes. Nice one, rather dry one, rather light body and mouthfeel

50cl Fles bij 't Kelkje. Bruine kleur, beige kraag. Caramel, broodkorst, noten, hazelnoot, licht gebrand, vijgen, grassig bittere finish. Lichte tot medium body. Prima, smaakvol, zacht.

500ml bottle. Opalescent, redd-ish, dark amber colour with average to huge, firm, creamy, moderately lasting and lacing, white head. Toasty, nutty, minimally chocolately, caramel and dark malty as well as slightly grassy and minimally floral, hoppy aroma, notes of praline, nougat, some milk chocolate, toffee, a touch of caramel. Taste is slightly toasty and nutty, minimally chocolately, dark and caramel malty, minimally grassy hoppy, hints of praline, nougat, toasted hazelnut, peanut, a touch of toffee and milk chocolate.
Minimally creamy, watery texture, smooth and soft, silky, simultaneously minimally dry palate, medium, dense, mildly prickly carbonation.
Balanced, harmonious, smooth - good.

Bottle. Color: Clear amber, off-white head. Aroma: Bread, malty, some caramel. Taste: Bread, lightly toasted bread, malty, some caramel, subtle herbal, floral hop backbone. Moderate sweet, light bitterness. Slightly sourish (blueberry hints) and buttery, but I wonder whether that's meant to be. Ok overall.
