Walter, Jurgen’s new dog, is an old style short haired St. Bernard like the original 19th century Swiss Alpine rescue dogs. With Walter’s heritage in mind, we reformulated our Hefeweizen to an old style Bavarian Hefeweizen. We are using the original strain of yeast, the heart and soul of this Bavarian-style beer delicacy. It produces a hint of clove aroma and a pronounced fruity flavor profile. Paired with a moderate amount of Halletauer hops, this incredibly drinkable beer resembles a true time capsule of Bavarian brewing. Brewed in strict accordance with the Bavarian Law of Purity of 1516.

Keg at the brewery, 8/24/24. Hazy yellow, large white head, average retention. Aroma of clove, wheat, banana. Taste is bubblegum, clove, wheat, banana. Well balanced.

Light banana, clove. Pours golden with ok head. A little lemon. Light tart finish but mostly clean. Tap at Chalice.

12 oz procured from a Bayern rep, as St. Walter Hefeweizen. Aroma has notes of banana bread, clove. Pours cloudy orange with a one+ finger off white head with decent retention; some floaties. Tastes authentic with clove phenols and banana esters. Lightly sweet with a faintly bitter hoppy edge and a hint of acidity. Lovely pillowy mouthfeel. Tip top rendition. I wonder if they’ve improved on the recipe since it was known as St. Wilbur.

Bottle. Clear golden color, fluffy white head with good retention. Aroma of dusty, peppery citrus, subtle banana. Taste is grapefruit, bread.

Aroma of wheat backed by a mild yeasty spice. Brassy color with a white head that was impressive. Starts with spice, wheat and arguably a small bit of banana. Not quite medium bodied, but the carbonation and the spice have a pleasant impact. Nice finish that has the feel of banana without that much of the flavor. Great label too.

Bottle: Poured a hazy gold color with a moderate white head and nice lacing. Muted aroma of wheat and grass tones. Taste is in the light category; wheat, grass, hint of yeast, some light sweetness.

Clear dull gold colour, though there is a lot of sediment at the bottom of the bottle. Light aroma of apples and pears plus a hint of wheat and vague phenols. The body has some zippy carbo, is fairly heavy but yet not sweet. It seems to have quite a bit of hoppy bitterness for the style. A slight lemony, bubblegummy note is the main feature. Dry finish. Not a bad drinker overall, despite not hitting any particular marks.
