Trouble in paradise! A frivolous damsel enters the scene. It is a young lady that over a few months matured in oak wine barrels, which gave her a deep but soft-bitter tannin aftertaste. The taste is full and complex because the brewers induced a controlled souring during the ripening process. The Mam´zelle is by origin a blond beer. Ripening gave her a soft red glow. This is the reason why she is called ‘high-blond’. The alcohol percentage is 8.5 volume. Brewers maintain that she is ‘untameable’.

Aromat jablek nie w pelni dojrzalych, W smaku kwaskowe owoce, pigwy, i lekka slodycz mango. Ale to piwo jest wyraznie jednak kwaskowe i wytrawne. Cos miedzy lambickiem a dobrym wytrawnym chardonay

330 ml bottle into tulip glass; batch #10, no bottle dating. Pours lightly hazy golden amber/light orange color with a 1-2 finger dense and fluffy off white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation. Aromas of big tart/sour lemon, lime, cherry, berry, peach, apricot, pineapple, pear, green apple, mango, melon, red wine, toasted oak, vanilla, peppercorn, citrus peel, hay, straw, grass, herbs, leathery/musty funk, wheat, cracker, biscuit, light red wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast, spices, wine barrels, and moderate bready malt notes; with great strength. Taste of big tart/sour lemon, lime, peach, apricot, mango, melon, lemon, lime, cherry, berry, peach, apricot, pineapple, pear, green apple, mango, melon, red wine, toasted oak, vanilla, peppercorn, citrus peel, hay, straw, grass, herbs, leathery/musty funk, wheat, cracker, biscuit, light red wine vinegar, and yeast/oak earthiness. Moderate lactic tartness and yeast/wine/oak tannin spiciness on the finish. Lingering notes of tart/sour lemon, lime, peach, apricot, mango, melon, lemon, lime, cherry, berry, peach, apricot, pineapple, pear, green apple, mango, melon, red wine, toasted oak, vanilla, peppercorn, citrus peel, hay, straw, grass, herbs, leathery/musty funk, wheat, cracker, biscuit, light red wine vinegar, and yeast/oak earthiness on the finish for a while. Awesome complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, spices, wine barrels, and moderate bready malt flavors; with an awesome malt/tart/spiciness balance, and zero puckering/astringent flavors after the finish. Light-moderate increasing dryness from tartness/spiciness. Medium carbonation and body; with a very smooth and moderately bready/grainy/acidic/tannic balanced mouthfeel that is great. Zero warming alcohol for 8.5%. Overall this is an awesome sour/wild tripel style! All around great complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, spices, wine barrels, and moderate bready malt flavors; very smooth and easy to drink for the ABV, with the modestly spicy/lactic/tannic/drying finish. Really outstanding and well developed Brett/Lacto complexity, awesome red wine barrel presence, and balancing bready malt backbone. A really enjoyable offering.

Bottle. Cloudy honey coloured. Small off-white head. The nose is sour, tart and intense. Fruit, berries, lightly wild. Medium body. Fairly sour taste. Very dry and tart. Fruit. A bit lactic. Light bitterness. No alco feel. Very good.

Bottle. Amber beer with a cream head. Sour and light tropical fruit aroma. Oak and sweet malt flavor with sourness. Medium bodied. Sourness and light oak linger with light fruitiness and light oak.

Bottle. Misty, yellow-orange color, weak foam. Aroma: fruit vinegar, barrel, malt, homemade wine, soaked apple and pear, esters. Taste: homemade wine, fruits, barrel, sparkling, juicy, pleasant acidity.

Bottle at Cafe Rose Red Brugge. Hazy orange gold colour lasting white head. Sour lemon aroma and then sourness and malty biscuit in the mouth. Moderate sour finish. Initial impression is a beer somewhere between a geuze and a blond. Some white wine character on aroma. Yes very drinkable and would happily drink this again. Really interesting. Loved the sour regular ale mix of flavours.

KRS 070117. Red golden color with an off-white head. Aroma is sourness, malt, berries. Flavor is sourness, acidic, vanilla, yeast, sugar, berries, dried fruits, oak. Complex nice beer.
