Trouble in paradise! A frivolous damsel enters the scene. It is a young lady that over a few months matured in oak wine barrels, which gave her a deep but soft-bitter tannin aftertaste. The taste is full and complex because the brewers induced a controlled souring during the ripening process. The Mam´zelle is by origin a blond beer. Ripening gave her a soft red glow. This is the reason why she is called ‘high-blond’. The alcohol percentage is 8.5 volume. Brewers maintain that she is ‘untameable’.

0.33 l bottle from 'belgiuminabox.com', best before February 2019, cellared for a year. Clear, amber with a thin, frothy, slowly diminishing, white head. Slightly sweetish, sourish, quite fruity and slightly funky aroma of lemon, gooseberry, some vinegar, a touch of barnyard and hints of glue. A little sweet, medium sour, fairly fruity and a little funky taste of lemon, gooseberry, vinegar, quince, some wood, a touch of barnyard and traces of glue, followed by a medium long, quite tart, gently dry, vinegary and slightly woody finish. Medium body, gently astringent and moderately effervescent mouthfeel, average carbonation. A bit too much vinegar for my liking, the glue doesn't really bother me though. Other than that an intriguing beer with enough residual sweetness and a balanced acidity.

Bottle at home. I just typed a whole rating but RB messed up. Slight hazy golden with small white head. Sour apple, grains, gooseberries, light cider vinegar, coriander, soft sweet malts, flight flowers 💐 🥝. Over medium sour, light sweet and very light bitter. Medium bodied.

33cl bottle on 14th May 2018, in Cafe Red Rose, Brugge. Hazy golden body, white crown on her head. Farmyard aroma and taste, not really my thing but I managed to drink it all. Scored objectively.

Sampled @ Zythos Bier Festival 2018. A hazy light orange golden beer with a small white head. Aroma of tart raspberries, dry garden fruits. Taste of dry herbal fruits, raspberries, red fruits.

J'ai beau ne pas être une grand amateur des sour ale, je dois reconnaître un travail certain sur cette Cuvée Mam'zelle qui fait partie des plus abouties que j'ai pu déguster. Le secret : une maturation en fût pendant laquelle le brasseur a contrôlé l'acidification. Il en ressort une bonne complexité sur des arômes de vinaigre de vin blanc, de fût mais également avec une arrière bouche plus douce sur le fruit avec citron, pomme et poire notamment. La longueur et l'ampleur en bouche sont plutôt bonnes de surcroît, et l'alcool, avec ses 8,5 % Abv respectable. L'amertume, pourtant à 50 d'EBU se ressent peu par contre, masquée par l'acidité. Côté esthétique, joli blond vénitien, légèrement troublé sans mousse cependant. Cette Mam'zelle me ferait presque apprécier les sour ale!

At Brugs Bierfestival, 3 February 2018. Cheers to Anke, Ian, Kevin & Jerre! Cloudy yellow with a diminishing, frothy, white head. Strong aroma of barnyard, green apple, yeast, oak, leather, spices and grapes. Tastes light fruity sweet and medium to heavy funky sour; tart, woody finish with lingering hints of spices and hops. Medium body, slick texture, soft carbonation. Excellent balance. Retry from the bottle. White wine, grapes, wet wood; quite a lot of 'bretty' white wine in the taste & the finish, bit spicy, woody, funky sour stonefruit.

Bottle from Beautiful Beers, Bury St Edmunds. Drunk at home. Mid- to dark gold, hazy. Not much head to speak of, just a small ring. The smell is an intense horsey funk, with light citrus notes and sourdough. There's a lemon juice sour to the taste with woody flavours, ginger and yeast notes. Long and extremely dry finish. Overripe grapefruit and a touch of banana in the aftertaste. An incredibly intense experience.
