Little John’s local bees create a spring wildflower-honey that lends a sweet, earthy complexity to a traditional style of beer with a balancing snap of ginger in the finish.

22oz bomber poured into my Chimay Trappist glass. 2011 Vintage. Pours a clear dark amber with minimal head. Aroma is mostly honey with a slight nose of sour green apple. Taste is light sweet. Alcohol, honey and some mixed berries. Light bodied with a somewhat thin texture. Lively carbonation and not much of a finish. Overall, I like this beer. Nothing I would seek out but I’m glad I’m drinking this one.

Draft at Haze. Deep amber-brown, way darker than I wouldve expected for the style. Thin, steady oily head. Sweet and big, with some thick honey and ginger notes. Sort of like an imperial honey beer. Sweet, sugary, heavy. Might have benefited from more hops, which could create more depth. Some mellow malt tones. OK, but a little tame and boring too. Tripels are already too sweet most times, this just creates an overload.

Bottle. Dark. Lear amber color, fluffy white head. Aroma of caramel and white pepper. Taste is more bitter than your average tripel. Tasty enough.

Location: 22 oz bottle from Buy Rite, 12/29/11

Aroma: The nose fairly sweet, with some caramel malts, clove, ginger, and a hint of honey
Appearance: The pour is a hazy reddish-copper color with a small beige head and drops of lace
Flavor: This one has a fairly sweet flavor to it, made up of mostly caramel malts (with touches of honey), and that is balanced by the spice profile, it finishes with a bit of a ginger twang
Palate: The body is medium, it has a slight stickiness on the mouth, and a tingly, gingery finish
Overall Impression: This one was fairly interesting. While I could make out the Honey component, I found it to be fairly subtle, compared with the Ginger component that I found to be much more prevalent. There is also quite a complex mix of spices and other flavors that give this beer a nice depth. This one may have been a little on the sweet side for my tastes, but the complexity of flavors and how interesting this beer is caused me to give it a nice bump in the overall score.

Taster at Bavarian Lodge. Luscious, almost transparent brown, a thin foam topper. Sweet honey smell, but subdued. Taste is again a little thin, like a sparkling mead. Still, it’s a happy mouthful, with happy bubbles and happy malts… sorry, that’s the Dragon’s Milk I had before this talking. But I find it to be a fine, sweet abbey beer, with honey playing very prominently up front.

Crabapple, apple, and honey nose. Clear copper, medium yellow head. Distinct crabapple flavor with a persimmon tartness and finish. Medium body, not hot. Fruity and wanting more of a malt presence. Quite unlike a typical tripel. Decent.

Bottle. Pours reddish amber with off white head. Nose/taste of honey, caramel, lemongrass and fresh ginger root. The ginger comes out strong in the taste, but is still present in the nose. Medium body. Not much of a tripel but a tasty beer nonetheless.

Deep translucent orange-red body, thin to medium buff head. Sweet nose with yeast, honey, and brown sugar, lacking fruity esters. The body is tart and very sweet, dominated by honey and ginger. Soapy palate. If this beer ever did resemble a tripel, the honey and ginger have masked it well.

Bomber from Whole Foods Charlottesville, VA. Pours a clear red color with a large fizzy offwhite head. Fairly poor head retention and lacing. Aroma of ginger, caramel, honey, stone fruits, toasted malts and a bit of a metallic note. The taste is toasted malts, caramel, bread, honey, ginger, brown sugar. Medium bodied. Pretty good beer. My constant disappointment with New Holland hasn’t been present the last few beers I’ve tried. I’m glad they’re improving.

Bomber. Deep golden body with a tiny-bubbled, white head, mostly diminishing. The aroma is sweet with honey and spice, especially clove and ginger. It has notes of alochol, toasted grain and caramel. The flavor is moderately to heavily sweet and lightly bitter. It finishes moderately sweet and lightly to moderately bitter. Medium body, watery texture, lively carbonation. Overly sweet for a tripel and the spices taste unnatural and forced. The aroma is better than the flavor. I liked it a little more after a few ounces than I did at first. But it’s still a long way from being a good tripel.
