Sheep Eater Scotch Ale was brewed to showcase the role of malt in the flavor of beer and brewed in strict adherence to the Reinheitsgebot, or German Beer Purity Law.

Scotch Ales are some of the world’s most flavorful beers. Scotland’s cold, blustery climate lends itself to the growing of barley and oats, but not to the production of hops, which are almost always added sparingly.

The yeast must work at cooler temperatures than is customary for ales, resulting in maltier, cleaner, less fruity or estery, beers. The color often comes from black roasted malt, which imparts some dryness, but because of the lower attenuation and hopping rates, Scottish ales are almost always slightly sweet and incredibly drinkable.

Ours was brewed with black roasted barley, biscuit and peat-smoked malt. It was gently hopped, fermented cool and aged cold for weeks for smoothness. It is copper-brown in color, with some sweet maltiness and plenty of body.

Try it with ham, roast pork or chicken, roasted vegetables or venison, crème brulee or, most traditionally, Scottish butter shortbread cookies.

From Aug 2006

Poured from 1Qt 1.8oz waxed and swing top bottle(2005) a dark brown with a medium sized head of foam that dissipated quickly to leave just a fine broken layer.

The smell is really sweet caramel malt.

The taste follows through with roasted malt and the sweet caramel noted in the smell and it's done very nicely... the malt character is really big but doesn't translate to overly sweet and that has to be due to the presence, subtle as it may be, of the hops. The finish, again, has a nice malt bite to it.

Bottom line: This is a very tasty example of a Scotch Ale and I can easily recommend it.

Nice deep brown coloured body with a large, off-white head, about four centimetres tall. Aroma of roasted malt, nuts, earth and a good dose of caramel sweetness from pure sugars. Medium-bodied; Assertive nutty and earthy flavour from the malt with a touch of sugar, some light mushroom and musty flavours and some subdued chocolate flavours. Aftertaste is fairly minimal with just malt and a little sweetness and mostly toasted malt flavours, all with a relatively thin body. Overall, a decent beer, but not showing much complexity, or depth in flavours - just the malt and sugars and not much else. Still, nice to try, and i’m sure the age helped mute the flavours to some degree. I sampled this 75 cL bottle purchased from Super Market Liqours in Fort Collins, Colorado on 17-March-2016 for US$6,99 sampled at Shenandoah National Park on 14-May-2016. On draft at the brewery. Pours a clear cola with a tan head. Light nutty nose. Flavors of caramel. Medium bodied. Slightly sweet malty finish

Cabbage and tobacco nose with boozy cherry accents. Clear brown, thin head. Tobacco is dominant, but earthy potato and cranberry notes are also present. Medium body, moderate carbonation. Too vegetal to me. Aside from that I thought it was neat and would like to try it in a fresher condition.

2014 vintage bomber.Rough pour into a thistle glass, yields a nice foamy billowing head, nutty, peaty aroma, very earthy . Taste brings in some malt sweetness, roast grains. Slick mouth feel , lingering sweetness.

1 liter swingtop bottle courtesy of phaleslu. Thanks! 209 vintage bottled 12/17/09. Pours a clear brownish ruby color with a large tan head. Good head retention and lacing. Aromaof toffee, raisin, toasty notes, earthy notes. Maybe a little oxidized. The taste is toffee, earthy notes, cherries, raisins. Medium-full bodied. Nice beer.

Draft at Cambridge Commons. Cloudy dark brown, beige edge head. Aroma of bitter cocoa. Taste of thick caramel syrup, toffee. Sweet and rich.

Aroma: The nose is fairly sweet, lots of rich caramel and roasted malts and some dark fruits
Appearance: A dark brownish color, slight red hue, and bubbly brown-beige head
Flavor: The taste is rich and malty, fairly complex, dark fruity flavors, roast, and a drop of smoke
Palate: This one has a medium-full body with a smooth and sticky feel, soft carbonation
Overall Impression: I can see why this one gets the acclaim that it gets. It is rather good, and if I can say that after drinking a whole liter of it, so it must also be pretty darn drinkable. Anyway, this is very solid. One that I would and will drink again. It is really high quality stuff.

Bottled. Hazy mahogany colour, small head. Aroma of caramel and winegums. Sweet and fruity, full bodied. Malty with plenty of chocolate sauce and estery winegum. Fairly low bitterness.

Pours deep mahogany into a thistle. Tight off-white head with good retention slowly recedes to skim surface. Dark fig, raisin and treacle aromas. Smooth and creamy with sweet mollasses and figs. Nice.
