With some selections aged up to 36 months in Firestone Walker barrels and others no less than 8 months in bourbon barrels, this blend reflects our versatility, and never-ending pursuit and passion for perfection, in every bottle. As always; unfiltered, unpasteurized, and naturally delicious. Not a single beer, but rather a journey into taste!
Enjoy!
Please enjoy our beers in good health.

Sampled at the DC Epic Sour Tasting 2010. Pours a transparent, copper amber with some spitty off white head. Nice, oaky aroma, lightly tart, oranges, caramel, a little salty smelling. Flavor is tart, oranges, caramel, the bourbon flavor is a little watered down. The finish is medium bodied and a touch oaky but a little watery.

Bottle at DC Epic Sour Tasting 2010, courtesy of ryan, much appreciated. Hazy copper/brown color, scant head and lacing. Aroma of apple cider, vinegar, oak. Taste is similar with a bit of salt. Nice enough.

Thanks a whole lot to Peter, I never thought I would get to try this especially since time is not on my side. But I was glad you shared this. The 12oz bottle pours a thick muddy brown with no head. Aroma is all a woody sweet and sour. A good amount of vinegar and aceto. Its all thrown in there with no style or grace. Flavor has more barrel coming through, wood sugar, and messy sourness. The sourness has no backbone either, more like a sour essence. Unfortunately, for me the beer had no direction, just a blend that goes no where. I also see the age really not helping this beer at this point or any more in the future. I am glad to have tried it but it wasn’t anything special.

FRO Throwdown: Hazy caramel color. Oaky and deep sherry, caramel. Nice and funky sweet.

Bottle from Styles. Murky, sediment-laden sewage orange-brown body, thin cream head. Aroma of sour funk, including pineapple, oak, and light spices. Musty. Strong funky body, with pineapple, a touch of apple juice, and light sweet breads in addition to barrel.

12oz bottle as a bonus from Pailhead, hell yes! Shared with SuIIy on 8/24/07
Lovely pour, as usual, for JP, with a large, white, well-aerated head that leaves sticky, webby lacing everywhere and is retained well. Body is a copper-peach with medium to medium-high clarity.
Intense brett fruitiness in the nose runs the complete spectrum of yellow fruits, tropical fruits, and even some light citrus notes. Very strong and with some moderate oak tannin to calm things down lightly. Light honey notes from the malts are not overattenuated, and there is definitely a huge complexity to be found here with all the other critters lending their talents (definitely a bit of lactic and even malic acid). The only problems I found with the aroma, which never peters out, even at the end, were a strong woodiness that gives a bit of sharpness, exacerbating the already dry, somewhat fuselic alcohol notes present on the end.
Just a fun, fairly straightforward wood and brett beer in flavor, with a strong texture due in part to the tight, engaging carbonation and moderate maltiness. Tart on the end, of course, and perhaps even borderline sour. Peaches, pears, limes, mangoes, nectarines....very estery and delightful. Some alcohol warmth on the finish.
Great stuff. Looks like the waiting paid off on both the carbonation and bacteria categories, as many early reviews complain of too low carbonation and not enough wild yeast influence.

(Bottle 35,5 cl) Courtesy of sk8viking. Hazy, orangey brown with a beige head. Acidity in the nose, vinegar plus oak and overripe fruit. Medium body with some caramel, oak and vanilla - both sweetness and acidity. The finish is dry and tart. Delicious indeed. 290407

Bottled. An unclear amber beer with a lazing orange head. The aroma is sweet and very fruity combined with lighter notes of brettanomyces and some acidity. The flavor is sweet and at the same time rather acidic from brettanomyces, combined with strong notes of fruit - especially peaches, leading to a dry bitter end.

Sampled at the O-Town throwdown. Poured a murky brown with thin off white head. Tart, sour and a bit musky aroma with hints of a vague sweetness. Nice fruit flavor that turns tart and sour with slight undercurrent of musky funkiness.

12 oz. bottle from Ughsmash (thanks, Jason!) - cloudy copper pour, with minimal head, but lasting lace - wonderfully inviting, warm aroma of wet oak, over-ripe apples, earthy, damp, musty smells, nutmeg, cherry skins, some background herbal notes - flavors of oak and vanilla up front - semi-tart apples and grape skins follow, along with a light spice profile - not all that sour, but enough to satisfy you if that’s what you’re looking for - more light woodiness and a light buttery/nutty quality - some winter/mulling spices make their presence known - quite a nice blend, and one in which the best qualities of both beers are showcased - one of the best JP beers I’ve had.
