Witkap-Pater Stimulo (export name: Abbey Single Ale) is a refreshing gold-colored beer of high fermentation and with re-fermentation on the bottle - thus a living beer with evolving taste. Poured with care you get a rich, white and stable foam collar with a creamy structure and sticking to the glass. You can smell the aromatic hop flowers of Erembodegem, a local natural product. You can also smell a strong ferment typically for the Witkap-Pater. Their are no other taste-makers used. During degustation you get a taste sensation starting with a soft mouth filling taste, passing in the a refreshing taste and ending with a tasty hop-bitter after taste.

A light yellow, lively beer which almost poured into table. A big and blond head. Aroma is mild, fruits, yeast, some spicyness. Taste of fruits, some light maltyness and honey, hint of herbs in the aftertaste. Light+, fresh, smooth carbonation. Too mild flavours, but without bothering nuancees, fresh and easy.

33cl bottle ot Witkap-Pater Stimulo from the Beer Boutique, Putney. Amber with a thin white head; yeasty aroma; dry with a yeasty taste and a touch of citrus; and a fresh, spicy bitterness and warming alcohol to finish.

0.33l bottle @ Braai Tapperij de Mug, Middelsburg. This is a crystal clear golden one with a medium sized lasting and kinda bubbly just off-white head. Well, actually it's getting kinda dark, so it could just as well be bright white. It has a clear but somehow hard to tell-aroma. I think it's almost grainy and corn-sweet with some dusty old fruit-basket tones, but it's getting hard to tell. At least I'm getting some hints of Belgian yeast! That's for sure. The flavors are light and almost fluffy. I get some zesty references in this one, it's light sweet and bitter and it has an element that reminds me of a German Weiss. Wheat perhaps? I'm not sure. Could just as well be the yeast. Anyhow, it's quite tasty and I enjoyed drinking this one. 30.05.2012

June 2010: 33cl Brown bottle, poured into a ’Corsendonk’ stemmed tulip glass. Very pale gold, light blonde almost. A huge snowy white foaming head sat on top of the highly carbonated body. The smells were a little on the sweet side, with some cereals to calm it down a bit. The initial taste was also fairly sweet for this style, but to be fair a drier aftertaste did appear as the mouth got used to the beer. The alcohol was evident from the first sip, a trait I’m not too keen on, and the bodyfeel was let down somewhat because of this. Overall an average Belgian Blonde.
