The Enfant Terriple is put for 6 months on cherries: 250 g sour, un-pitted cherries per litre beer. During this time, the bacteria are given time to digest all sugars even further and to let the soft natural souring have its way. Meanwhile, the cherries slowly donate their blood-red colour and their succulent taste. Part of this cherry also is transferred to the oak wine barrels where it – in a grow-bed of lactobacillus – during a year adds further to a woody souring and softening. The result is a triple-kriek ‘pur sang’. With this, a new saint is added to the Cuvée family of Brewery De Leite. The Cuvée Soeur’Ise, is a wink to cherry in French (= ‘cerise’). The divine saint has already seduced many, all over the world!

Cherry, yeast, biscuit malt, and hay aroma. Cloudy red with minimal head. Moderately sweet cherry, yeast, biscuit malt, and moderately bitter dry hay and grapefruit peel flavor. Nice body. Smooth.

Bottle in Café Rose Red on 8th June 2023. Light pink head on a red body. Cherries (semi-sour) dominate the nose and taste, some woody aging notes within the flavours stop it being just about the cherries.

Bottle at Ambasada. Hazy red with white pinkish head. Cherries, sourish, somewhat acetic, moderate sourness. Not bad, but not getting any real complexity. Medium bodied.

Bottled 330ml. -at Valhalla Zagreb, shared with hrabren. Red coloured, small off-white head, cherries and light acetic nose. Cherries, light alcohol, light acetic and quite strong sour taste. Pleasant.

0.33 l bottle as Triple kriek, 8,0% abv. Shared with Ogi at Valhalla Craft Beer Bar, Zagreb. Dark ruby red. Small head. Dark cherry, fruit jam, funky notes, a spicy touch, alcohol. Glue. Quite sour, juicy, cherry, berries, funky. High carbonation. Vinous. Sparkling. Jumpy. Spicy. All around. Sharp. Some glue in the finish.

Creamy white good mostly lasting head. Red colour. Light malty and hoppy aroma. very acetic and strong cherry notes. Moderate bitter acetic flavor. Cherries very present. Long moderate bitter finish. Creamy palate. Nice.

Bottle, backlog August 2014. Clear, blood-red body under a nice, lacing off/white head with traces of pink. Aroma has cherry, acid, malt and funk. Taste is nice with sweet and sour malt/berries, cherry, vinegar, funk and some wood. Fine body and long lasting aftertaste. Very fresh and rather complex fruit beer.

Bottle from Etre Lightly hazy dark red with a decent sized frothy white head that dissipates quickly. Wonderful earthy funky cherry on the nose with just a hint of balsamic. Flavor is lightly acetic earthy funky cherries. Great Cherry expression but I'd love a lot more lactic tartness.
