The Enfant Terriple is put for 6 months on cherries: 250 g sour, un-pitted cherries per litre beer. During this time, the bacteria are given time to digest all sugars even further and to let the soft natural souring have its way. Meanwhile, the cherries slowly donate their blood-red colour and their succulent taste. Part of this cherry also is transferred to the oak wine barrels where it – in a grow-bed of lactobacillus – during a year adds further to a woody souring and softening. The result is a triple-kriek ‘pur sang’. With this, a new saint is added to the Cuvée family of Brewery De Leite. The Cuvée Soeur’Ise, is a wink to cherry in French (= ‘cerise’). The divine saint has already seduced many, all over the world!

KØLF 080319. red amber color with a pinkish head. Aroma is sourness, berries, cherries. Flavor is sourness, berries, cherries, vanilla, funk, wood. Wonderful beer.

Bottle. Ruby color, with a small pinkish head. Aroma is cherry, not too intense, but clearly real cherry. Taste is fruity, cherry, moderately sour and well balanced. Medium-high carbonation, dry finish. Refreshing. Maybe the best non-lambic cherry beer I had.

Opaque red colour. Strong cherry character, moderately sour, with good body.

330mL bottle, pours a deep dark red with a small white head. Aroma brings out balsamic vinegar, tart red fruits, and some earthy notes. Flavour is along the same lines, with earthy notes, tart red fruits, and a touch of balsamic. Earthy and pithy. Unusual, but fairly enjoyable.

Cloudy, pink. No head. There's a nice cherry character, wood, some pits. Mild tartness, quite spicy (clove, cinnamon), lots of cherry. Light body. Just a bit of yeastiness and acidity in the back, but again quite a bit of cherry all the way through.

On tap @Luppolo Station (Rome). Sangue di piccione, abbastanza limpida e brillante, con schiuma stentata e poco persistente. Al naso note di ciliegia, frutta rossa in genere, leggero cuoio e acetico. In bocca è acida decisa, tanta frutta rossa, anche tart, non elegantissima ma di carattere. Corpo medio-alto, carbonazione media. Lascia il segno.
