The Enfant Terriple is put for 6 months on cherries: 250 g sour, un-pitted cherries per litre beer. During this time, the bacteria are given time to digest all sugars even further and to let the soft natural souring have its way. Meanwhile, the cherries slowly donate their blood-red colour and their succulent taste. Part of this cherry also is transferred to the oak wine barrels where it – in a grow-bed of lactobacillus – during a year adds further to a woody souring and softening. The result is a triple-kriek ‘pur sang’. With this, a new saint is added to the Cuvée family of Brewery De Leite. The Cuvée Soeur’Ise, is a wink to cherry in French (= ‘cerise’). The divine saint has already seduced many, all over the world!

(On tap @ VilleValla Pub, Linköping, Oct 8 2015) Pours pink/red and slightly opaque with a few whitish bubbles on top. Aroma is acidic, lacto and light acetic, with lots of sour cherry flesh, some wet earth/sulfurous funk notes and oak, light hints of bready malt. On the palate, lactic lemon and sour cherry dominate making it quite tart, with an intense acidic sour bite even for a kriek. Hints of sweetness from the fruit and a little oak show up mid-palate. Funk is restrained compared to the nose. The finish has a real fruit-lacto pucker to it, with acetic hints. Fairly light but not watery, with light carbonation. A pretty decent cherry beer, really on the acidic side but reasonably drinkable still. Solid.

Bottled at Pressklubben, Stockholm. Clear burgundy colour, mid sized head. Tart cherry stone aroma. Dry with mild acidity and medium body, rounded mouthfeel. Acetic cherries, fruit. Low bitterness. Quite intense. Good!

Bottle - Deep, dark cherry notes with a touch of wood. Dark maroon purple with a light pink head. Nice cherry notes, touch of wood and a light tartness. Nice, but not as complex as I had hoped.

Bottle from Tanakaya. Pours a deep ruby with some lighter highlights. Aromas of cherry and wood with some funky and cobweb-in-basement-on-a-wooden-post-in-the-corner musty character as well. The tartness from the cherries really jumps out along with a nice light horse blanket funk. A bit of young berry as well and loads of wood. Bone dry on the palate with good crisp carbonation. Wonderful.

Poured from a bottle. Aroma is fairly cherry forward with some sour and sweet, candy cherry notes. Some light oak notes with light acidity and citrus notes. A light barnyard mustiness. Faintly medicinal. Pours a hazy, deep purplish-red with a light brown hue and a moderately small, somewhat thin, slightly pink head that recedes fairly quickly to the edges where it lingers. Light lacing and medium small legs. Flavor is moderately acidic upfront with some light citrus and tropical fruit notes. Moderate sour cherry notes with some lighter candy cherry character mid palate. Medium light bitterness with some light oak notes. A hint of alcohol. A hint of mustiness. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a pretty interesting sour cherry beer. Good cherry character with some light oak notes. Acidity is well balanced. Some sweetness.

330ml bottle [second of a De Leite series kindly delivered by bartlebier - I’m very thankful!]. Clear crimson colour with small to average, frothy to macropore, diminishing, pinkish head. Spicy, tart-ish aroma, morello cherry notes on oak and leather. Taste is dry, moderately sour, minimally tannic, notes of sour cherry, hints of wood, some vinegar spiciness. Compact, low-key, unresisting.

33cl bottle. Poured deep red color, thin pink head. Slight tart aroma cherries and some raspberry sweetness, wood. Inviting. Flavor has tartness, cherries, hint of marzipan. Tart, dry finish. Lovely kriek.
