The Enfant Terriple is put for 6 months on cherries: 250 g sour, un-pitted cherries per litre beer. During this time, the bacteria are given time to digest all sugars even further and to let the soft natural souring have its way. Meanwhile, the cherries slowly donate their blood-red colour and their succulent taste. Part of this cherry also is transferred to the oak wine barrels where it – in a grow-bed of lactobacillus – during a year adds further to a woody souring and softening. The result is a triple-kriek ‘pur sang’. With this, a new saint is added to the Cuvée family of Brewery De Leite. The Cuvée Soeur’Ise, is a wink to cherry in French (= ‘cerise’). The divine saint has already seduced many, all over the world!

Bottle, thanks SirLimpsalot. A bit hazy dark red with a small pink head. Sweet with cherries, berries, light oak and some minerals. Very easy to drink and with a low bitterness. Almost like a lemonade.

Trübe dunkelrötliche Farbe, wenig pinker Schaum. Geruch intensiv fruchig nach Kirschen, reife Früchte, leicht holzig, minimal säuerlich. Geschmack sehr fruchtig, säuerich, holzig, Kirschen, sehr rund, gelungen!

Big thanks to Matteo. Bottle shared at Chrisso’s May 2014 tasting 25/05/2014. Pink / red clouded coloured pour with a lasting pink frothy head. Aroma is nice fresh cerry, musty and funk and light acid. Flavour is dark cherry, sweet and tart, musty and horsey funk.

Bottle at the chriso May 2014 tasting - London. Thanks to Matteo! Pours clear, red-pink with a foamy head. The nose has bright cherry and jammy berries. Light to medium sweet with mellow tartness, slight funk, more vibrant cherry character. Light to medium bodied with average carbonation. Crisp on the finish with moderate sweetness, juicy cherry, light apple, good and fresh tart kick. Very nice. Drinks well for the strength. Lovely.

Tasting at the ever gracious ChrisO’s. Hazy pinkish red beer, good size pink head. Palate is airy with very fine carbonation. Light cherry and oaky sweetness. Balanced by mild sourness and lemon. Light airy finish. Very pleasant.

Bottle thanks to Matteo. It pours deep pink with a small white head. The nose is fresh, fruit, tart cherry, raspberry, sherbet and light candy. The taste is crisp, raspberry seed, cherry, Granny Smith apple, sherbet, candy, wood, light vanilla, earth, lemon peel and dry finish. Medium body and fine, prickly carbonation. Crisp, tart and fruity. Rather nice.

@ The Capital, Leuven. Dark red colour, light pink foam that disappears quickly. Very fruity aroma of sour cherries. Also some notes of balsamic vinegar. Dry finish. Easy drinkable and very complex fruit beer.
