The Enfant Terriple is put for 6 months on cherries: 250 g sour, un-pitted cherries per litre beer. During this time, the bacteria are given time to digest all sugars even further and to let the soft natural souring have its way. Meanwhile, the cherries slowly donate their blood-red colour and their succulent taste. Part of this cherry also is transferred to the oak wine barrels where it – in a grow-bed of lactobacillus – during a year adds further to a woody souring and softening. The result is a triple-kriek ‘pur sang’. With this, a new saint is added to the Cuvée family of Brewery De Leite. The Cuvée Soeur’Ise, is a wink to cherry in French (= ‘cerise’). The divine saint has already seduced many, all over the world!

This one slipped my notice and had to go hunting in Mississauga to find a couple. And I’m glad I did. Pours a murky pomegranate pink with some foamy pink head. Berries, sugar and funk in the nose. Nice dry sour bite right off the top, with lots of cherries and some cereal malt taste. Damn nice.

Big foamy pink head with great retention and soapy lacing. The brew is cloudy, cherry red coloured with a slight amber hue. Citric nose with some soft cherries and other fruity notes. The taste has some sourness, but not as strong as a standard lambic. Mild cherries with some tartiness from the yeast. Hints of oranges and other citruses. Not feeling the oak-aged part. A stronger lambic that is quite refreshing and lightly fruity. I was expecting a little more punch though. Nicely brewed overall.

Bottle: Poured a deep bright red color ale with a huge pink foamy head with good retention and light lacing. Aroma of fresh cherry notes is quite powerful. Taste is also totally dominated by fresh cherry notes with light sugary notes and light tart notes are also noticeable. Body is full with limited filtration and good carbonation. I really enjoy this fruit beer which is very refreshing and doesn’t end up tasting like fruit syrup.
