The Enfant Terriple is put for 6 months on cherries: 250 g sour, un-pitted cherries per litre beer. During this time, the bacteria are given time to digest all sugars even further and to let the soft natural souring have its way. Meanwhile, the cherries slowly donate their blood-red colour and their succulent taste. Part of this cherry also is transferred to the oak wine barrels where it – in a grow-bed of lactobacillus – during a year adds further to a woody souring and softening. The result is a triple-kriek ‘pur sang’. With this, a new saint is added to the Cuvée family of Brewery De Leite. The Cuvée Soeur’Ise, is a wink to cherry in French (= ‘cerise’). The divine saint has already seduced many, all over the world!

Bottle sample at a tasting at Max’s place. Thanks Tom L. Cloudy red with a pinkish head. Great cherries aroma, a bit jammy, sourish, with some oak, mild funk. Tart and slightly sweetish flavor, with lots of cherries, some oak, and a funky note. Medium-bodied. Great, delicious.

Flaska från Boxbeer.com. Gyllenröd med mörkrosa skum. Syrlig och söt med doft av syrligt körsbärsgodis och Maoms körbärskola. Tydligt syra men också godissötman och smaken i bra balans dessutom syrliga svarta och röda vinbär. Riktigt gott.

Bottle. Dark red color. Nice aroma of sour cherry and oak. Taste of tart, sour cherry, tannine, oak, lacto and some red wine. Very nice, like a flemmish old brown/red.

A reddish burgundy ale with a lacing thick collapsing pinkish white head. In aroma, tart cherry with loads of mineral notes, Brett, fruity esters and acidity, very nice. In mouth, a nice tart cherry with light Brett, light mineral notes, very good acquisition from LCBO.

(Bottl, 0.33 l, at tiong’s tasting, thanks rosenbergh, 20160317) The beer poured red. Its head was small and reddish. Aroma had cherries, cherry stones and malts. Palate was medium bodied, warming and rather dry with medium carbonation. Flavours were cherries, wood, malts, sweetness and sourness. Aftertaste was woody and sour. A good beer with lots of cherriess and still balanced.

Dark red with airy pink head. Acetic, vinous aroma, berries, cherries and hints of wood. Sour, acetic flavour. Sour cherries and nice barrel notes, marzipan and soft spice. Finish is dry with touches of paint thinner or acetone... but not in a bad way.

(i guess?). copper / redish color, small off-white head. smells sour, oak, cherries, marzipan, nutty, green apples, some funk, very nice wood notes. very very nice smell. full body, medium bubbly carbonation, slick mouthfeel. tastes sour, cherry juice, some nuts, marzipan, wood, oak notes, some funk, bit glueish. finishes medium sour with very nice cherry notes, green apples and notes of wood.very very nice one. Rerate: 0,33l bottle at home. bourdaux like color, small off white head. smells earthy, peppery, spices. nice smell. full body, light carbonation, slick mouthfeel. tastes citric, grassy, earthy, peppery, spices, some fruity notes. finishes dry and lightly sour with notes of earth, grass and citric notes. not much fruits on this one. not very good. first one was sooo much better. 7, 4, 7, 3, 15

Reddish pink color, light pink head. Aroma of cherry and raspberry. Taste is sour berries, light tannins. Decent.8-3-8-3-13. 2/26/2016. Re-rate 9/12/2016: Bottle sample at The Sovereign. More pronounced cherry aroma with tannins. Flavor has cherry and sourdough brownie dough. Holy cow.
