For Batch 27, the crew crafted an elegant base using California Syrah grapes and Arizona wildflower honey. Then they let it age in a variety of American oak barrels, giving it time to luxuriate in all that rich woodspice nuance.

Bottle pour at Superstition DTPHX, pours a deep dark mahogany, like a red wine. Aroma is rich, with deep honey nectar, gentle red wine grape skins, and liqueur-like booze. Flavour is rich and complex, with lots of honey nectar, a touch of red wine grapes, and a touch of floral character. Rich and balanced, with a subtle grape character. Excellent.

750 ml swingtop. This bottle is batch 20, made with Syrah grapes and Mesquite honey; bottle 405/2300, with an ABV of 13%. Aroma is honey, red wine, vinegar, leather, tobacco. Deep red hue with no head, looking like wine. Taste is highly sweet, savory, with honey, red wine, Rainier cherry flavors. Very rich, very tasty.

Tap into a taster at MBCT showing very dark wine brick red with no head. The nose shows moderately intense notes of raisins and honey. These two aromas seem to clash. The palate is full bodied. Pronounced honey sweetness with strong red wine characteristics - plum, bing cherries, currants, blackberries, and spicy Syrah tannins.

Keg at the 4th Copenhagen Beer Celebration, Session 4, 02/05/2015. Blackcurrant red with a crimson cap that clears to spotting. Nose is red berries, fruit compote, sweet notes, blackcurrant jam, honey drizzle. Taste comprises blackcurrant Lockets, sweet berries, caramel, floral rise, raw honey. Full bodied, oily feel, warming alcohol in the close. Ok.

Flip top bottle 54 thanks to Steve. Pours out a purple maroon with no head. Nose is big grape notes barrel notes wine lots of honey sweetness. Taste is more of the sweet honey lots of grape notes and a nice wine barrel.

A lighter burgundy red mead with aroma of sweet honey, light grape juice, light vinous character, very nice. In mouth, a wonderful sweet honey with funky grapeskin, oily mouth feel, winelike quality, alcohol warmth, very beautiful. Bottle at meadery.
