Blond sour beer inoculated with wild MO yeast and bacteria aged in our 70hL french oak foedre. Only available at The Cellar on the hand pump. The foedre will be filled, used, and refilled often, so the beer will always be evolving. Solera method style.

Draft. A- Barnyard, orange, musky. A- Orange color, clear liquid, white head. T- Funky, brett, barnyard, mild citrus, oak, white pepper. P- Light body, average texture, average carbonation, balanced finish. O- Lots of funk. I suspect this will evolve immensely over time.

Cask at the Cellar, 3/28/23. Nice cascading, off-white head. Large, well-retained. Clear bronze. Strong acetic and lactic. Gives a cherry-like character. Funky, musty, very Flemish sour-like. Wow so much cherry character from rich Brett. No big acetic acidity, only tart at best, which is surprising. Soft and malty, light vanilla from the oak with a creamy texture and no alcohol or flaw. Man that cherry character is out of this world and the balance is incredible here. Great malt depth and attenuation. Frickin cask oak-aged sours. What a place...

Draft @ CBC 2015. Pours a slightly hazy pale yellow color with a small white head. Has a fruity malty sour tart woody aroma. Fruity sour tart woody weak funky flavor. Has a fruity malty woody sour tart finish.

Draught@CBC2015. Hazy yellowish orange colour with a small white head. Aroma is fruits, some lactic and acidic notes as well as some sweet malts and a bit resiny and wooden notes. Flavour is lactic and vinegary along with some berries, fruits and mild funky and bready malty notes. Quite mouthdrying.

Cask at the Side Project Cellar, served in a stemmed glass. Surprising has that cask, foamy head, which sticks around. Very lambicy Brett aroma. Tangerine cobwebs. Flavor is tame until sour vinegar kick at very end. The flat body takes away from the experience. Cool to try a barrel, unblend version when compared to the superior blended bottled beers.

Cask at The Cellar. Pours a hazy orange gold with no head. The aroma is strong tropical fruit and oak. Thin mouth, very tart, tannic sweetness, grape, really nice.

Tap@CBC 2015, Red Session - fuzzy yellow with white head. Sour fruity aroma and taste, malts, prominent lemon, acidic, grapes, light vinegar, berry fruits, funky, light floral, tart on the palate, dry tart finish.

CBC. Hazy yellow with small white head. Aroma is malt, fruit, sour, brett, hop and lemon. Flavour is malt, fruit, brett, lacto, lemon, little sweet, little acetone, medium dry and acid.
