This ain’t your Grandaddy’s wheat ale! We embrace the crazy things that some other breweries will not speak of. All the "bugs and critters", as we say, go bonkers in the mash tun creating a sour mash. Similar to making yogurt and sauerkraut, a controlled temperature allows lactic acid creating bacteria to create a souring effect. We boil to politely "remove" the little guys. Refreshing, delightful, tangy, and just plain wonderful! (It’s OK to not like this one, at least you tried it!) Oh, and locally grown (Sossman Farms) Sonoran White Wheat is at the heart of this beer. Drink Local!

Crowler - Little green apple. Clear yellow pale gold with a small frothy head. Light green apple, something is not right.

Bottle at WTF 4. Pours a cloudy pink with thick off white head. The aroma is wheat, lacto, cereal. Medium body, citrus, wheat, lacto, crisp finish, good.

Draft at the brewpub in Gilbert, Arizona. The pour is cloudy yellow, with a well formed ½ inch white head. The aroma is tart citrus lemon along with fresh cereal bread malt. The taste is the tart lemon of the nose, and also picks up a nice general fruit flavor, grain notes and finishes almost on the sour side of tartness. The palate is light bodied, active carbonation and a dry tart finish. Solid.

Draft. hazy to cloudy yellow color, creamy white head. Aroma has lemon, raw bread. Taste is earthy lactic lemon, light body. Refreshing and tasty.

Draught at the brewery, 12/30/15.
Shimmering, bright, very hazy, pale-golden body is topped by a large amount of white head that slowly recedes to cover.
Lactic notes in the nose are immediately joined by a playful fruitiness (nectarines, starfruit, apples) that softens the usual stiff nature of a berliner weisse. Faint bits of honey, lots of raw wheat graininess and no alcohol or flaws make for a fun, more easygoing rendition.
The flavor continues this, with a softer, slightly maltier texture, with sweeter tropical fruits (there’s more ripe mango/pineapple here than the usual dry nectarine/apricot). Lactic acid adds plentiful tartness, but there’s no heavy breadiness from the wheat nor borderline dirtiness from the lactic character. Very flavorful, with a wonderful texture and tight carbonation.

Draught @ Mikropolis. Pours hazy pale yellow with a frothy white head that leaves some sticky trace on the glass while dissipating. Smell is subtle, tiny malty and tiny fruity with crackers, lemon juice, yoghurt, dry soil and lemon zest. Taste is sour, tiny salty and slightly fruity. Mouthfeel is crisp, dry, tart and light bodied. Finish is sour with crackers, lemon juice, yuzu juice, yoghurt, hay, minerals and lemon zest. Highly drinkable and tasty berliner. Job well done... Would love to try some fruited versions in the future.

[ As Arizona Wilderness Bear Wallow Berliner Weisse ].Clear light medium yellow color with a average, frothy - fizzy, good lacing, mostly diminishing, white head. Aroma is moderate malty, herbs, pieapple - citric, wheat. Flavor is moderate sweet and light acidic with a average duration, tart fruit, herbs, fruity - citric. [4/29/15] Draught at Mikropolis in Copenhagen. Pale yellow. Nice lactic wheaty aroma with some fruitiness. Sour flavor, wheaty, lactic, with some fruitiness. Light-bodied. Very nice and refreshing.
