In another exciting collaborative effort with our neighbors at Barrington Coffee Roasters, we bring you a bold American stout infused with cold-brewed coffee. PM Dawn exhibits an earthy, freshly roasted coffee bean and dark chocolate/mocha nose. The flavor profile consists of vanilla, hot chocolate, and caramel along with rich espresso. With a medium to heavy body, luscious mouthfeel, and light bitterness, PM Dawn is balanced and full, smooth with a drying roast character.

Imperial coffee and chocolate stout by a brewery renowned for its NEIPAs - a totally different concept, interesting. Can at pre-Zwanze tasting. Yellowish beige, moussy but thin and quickly dissolving ring, eventually all but gone, over a misty, very dark bronze brown beer, almost black in its overall colour. Aroma of green coffee beans, moist chocolate bars, damp earth, moist cigar tobacco leaves, wet coffee filters, tea, overcooked green peas, brown rum. Sweetish onset, candied figs and dates, beefy umami impression (almost beef stock-like), medium carb, full caramelly and 'brown bready' middle, toffee, black chocolate but never turning roasty bitter, with the coffee part limited to a 'green bean'-, vegetable-like, sulfuric retronasal aspect, strong and dominating, but not very pleasantly so; warming alcohol, lingering toffeeish malt sweetness. 'Cold brewed' is apparently not the most flattering way to apply coffee to imperial stout, certainly after having not just fabulous NEIPAs but also a very good Gose from Trillium, I must say I am left a bit disappointed here. If they got this right, they would have gotten close to being among the world's absolute top brewers in my book - but they still come quite close to that for all those other beauties they have created in their mere five years of existence so far.
