India Pale Ale has been a misused term. Not anymore – we believe this brew is as near to an original IPA as it is possible to get. 200 years ago an IPA would have used only local ingredients which must have been grown with no pesticides or artificial fertilisers (so organic). It would not only have had to ‘keep well’ but to improve with keeping, even in a hot climate. To achieve this authentically, we’ve introduced a wild yeast culture derived from the local environment. We have then used Suffolk well water, organic barley (pale malt) and finally hopped heavily with English organic Goldings (70IBU), it is then aged for 4 months in organic whisky barrels. The result is close to what would have quenched the thirst of East India Company’s hierarchy in the 1820’s and the Raj later on. On the palate it has a pithy dry bitterness, mild alcohol, British wild yeast funk, subtle sweetness and sparkle. In our opinion it is delicious and authentic!

7.0% - Golden colour with thin head. Aroma has sour woody barrel, reminds me old Vlaamse Bruin a bit. Lots of residual malt notes. Quite perfumed. Not great but very expensive.

Tap at Bryssel Beer Project Dansaert, Bryssel. Color is slightly cloudy orange with small white head. Aromas and flavors: Fruits, some Belgian yeast, vinegar,?, malts.... messy and weak.

Bottle shared into son - thanks to Daniel. Pours clear yellow-gold with a very slight white foam head. The nose holds grass, light funk, lemon. Light sweet flavour with more grassy hops, woody dryness, citrus peel. Medium bodied with soft carbonation. Dry finish, with more lemon rind, hay, grass, mellow funk. So so. Kind of reminds me of an unblended lambic.

Bottle split at L42, big thanks to L K Ess, 18/05/17. Lightly hazed golden orange with a decent off white cap. Nose is light funky trops, spice, orange, melon, apricot pissoi. Taste comprises light brett, funky licks, white peppery spice, melon on the turn, tarte white grape, spice, soft bread. Medium bodied, fine carbonation, drying close with a light fecal trace. Decent stuff.

Bottle shared on Level 42 18/05/2017. Many thanks to Daniel for this one. A light hazed golden orange coloured pour with a loose white head. Aroma is bug dirty baby diaper, tangy apple, horsey dank. Flavour is composed of dirty woody grains, apple, harsh grains, horsey, semi swet little buttery. Palate. Is woody, lowish carbonation, grains. Pithy lemon rind. Really dirty.

Bottle care of Dan. Consumed at L42. It pours lightly hazy golden with a small white head. The aroma is earthy, sweet - sour, musty, funky, oak, vanilla, orange sherbet, kumquat, earthy, must and white grape skin. The taste is crisp, dry, earthy, woody, earthy, leather, green apple, gooseberry, white grape, vanilla, sweaty and filthy. Dry and woody finish. Medium body and fine carbonation. Interesting stuff.
