For this wild offering, we rack our flagship farmhouse ale, Trillium, to age in neutral oak casks with a house Bug Blend of yeasts. Appearance is bright yellow-golden with light, gentle carbonation. Moderately funky and slightly tart, but not sour, Wild Trillium expresses subtle tannic structure with delicate notes of light citrus, pepper, and hay. Mouthfeel is soft and the finish is dry, crisp and tannic.

Tap@HImmeriget, Copenhagen - Golden orange colour with a tiny white head. Aroma and taste is tart fruity with notes of peach, apricot, lemon, straw, hay, yeasty touch, light citric and peppery spice into the close.

Keg at Omnipollos Hatt, Stockholm. Cloudy golden, small head. Tart peachy nose. Medium bodied with rounded mouthfeel. Sour peach and yoghurt. Straightforward lemon. Low bitterness.

On tap at a Churchkey event, pours a murky gold with a ring of white head. Nose has grapefruit, green grape, green apple, acetic acid. Flavor is tart with acid, lemon, green apples, grapefruit pith. Finishes tart and dry. A touch on the simple side. This version was listed at 10% ABV.

Draft @ The Rare Barrel, Berkeley, CA. Pours a hazy golden color with a small white head. Has a fruity sour tart woody citrus aroma. Fruity sour tart woody citrus flavor. Has a fruity sour tart woody citrus finish.

Pours an absolutely clear, light straw/hay-golden. White head atop is medium-sized, fading immediately to cover and showing moderate to low retention.
I don’t care much for Trillium Trillium, this being the oak aged, bugged version of that. As with Free Rise and Sunshower, the yeast is rather inelegant and the texture always seems watery, loose and overly attenuated, though still sugary (powdered). That’s more or less what’s going on here, but add to it strong, overbearing lactic-acetic notes and a buttery, tannic oak character. Even removing the poor texture from the equation, the nose is still dominated by oak and funk, but with nothing underneath it. Flimsy, cereal and sachharine-like malts/grains. Some cider-like suggestions as well.
Just too sweet, flaccid/mushy and inelegant. Dumped most of it, sadly.

Pours clear gold into a snifter. Bright white head with good retention recedes leaving spider lacing. Marshmallow, vanilla and tropical funk aromas. Funky marshmallow and sourdough upfront turning to a lemony tart finish. Nice.
