For this wild offering, we rack our flagship farmhouse ale, Trillium, to age in neutral oak casks with a house Bug Blend of yeasts. Appearance is bright yellow-golden with light, gentle carbonation. Moderately funky and slightly tart, but not sour, Wild Trillium expresses subtle tannic structure with delicate notes of light citrus, pepper, and hay. Mouthfeel is soft and the finish is dry, crisp and tannic.

Trillium Tap takeover at Beavertown 08/07/2017. A hazed deep orange coloured pour with a lasting frothy white head. Aroma is sour, mouldy wood, white grape, oak, sour yeast. Flavour is composed of sour tangy wood, grape and oak, wine must, apricot, oak tannin. Palate is sour, tangy, spritzy carboantion, drying finish. Nice complex sour.

Beavertown Trillium TTO. Keg. Hazy gold beer, small pale cream colour head. Palate is smooth and semi dry, decent fine carbonation. Smooth lemony sourness, mild sherbet and lemon zest. Light smooth finish. Reasonably approachable.

Unclear orange golden color with a small white head. Ok lacing. Looks nice and inviting. Solid funky aroma. Medium body and an average carbonation level. Tad rich acidity and a dry ending. Fruity, yeast, citric, spices and oak in the flavor. Tasty stuff.

(On tap @ Himmeriget, Copenhagen, July 5/17) Pours lightly hazed medium gold with a white head. Notes of hay, candied lemon peel, unripe peach, earthy mulchy Brett, oak, yeast with a lightly peppery spicy character, lightly tart with some grainy malt that leaves a light residual sweetness. Finish is dry, lingering hay, lemons, earth and hay, a touch of tannic oaky character. Medium bodied, smooth moderate strength carbonation, semi-crisp. Solid tart funky offering if not a boundary-pusher.

Draft. A hazy golden beer with no head. The aroma has notes of brettanomyces, lacto, and malt. The flavor is sour with notes of brettanomyces, lacto, malt, and lemons, leading to a tart finish.

Keg at the Beavertown Trillium Tap Takeover. Nearly clear gold with a small ring a white head. Metallic compost aroma with tangerine peel and a nice whiff of saison yeast. Full intense sour taste that spreads through the mouth to the outer reaches of the lips and the back of the tongue. Full oily body with sourness pervading every pore. Soured citrus and Grand Marnier in the aftertaste. A god among wild beers.

Keg at Beavertown. It pours hazy pale yellow white head. The aroma is tart, sour, tangy, green apple, lemon rind, bread and gooseberry. The taste is crisp, dry, tart, good mouth - pucker, granny smith apple, gooseberry, whitecurrant, zesty lemon, lime and bright acidity with a drying finish. Medium body fine, prickly carbonation. Decent sour gear.

Keg at the Beavertown event. Pours mostly clear gold with a creamy, white head. The nose has some tangy lemon, wheat, hay. Medium sweet flavour, some marmalade, ripe lemon, mild acidity. Medium bodied with massaging carbonation. Sweet finish, lightly warming, some more ripe lemon. Fun one.
