A beer inspired by a cocktail. Australian bartender Sam Ross created several enduring drink recipes whilst at Milk & Honey in New York, most famously the Penicillin Cocktail: a smoky, spicy mix of Scotch, honey and ginger and lemon. We have deconstructed these ingredients from the cocktail and put them all together to brew a beer we have been wanting to make for a very long time.
Dr Todd is our riff on the Penicillin cocktail. The end result is an Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger, some lactose sugar and aged in barrels with British Black Bee honey and finished with more ginger and lemon zest. The Penicillin was inspired by the Hot Toddy, invented by the revered Dr Robert Bentley Todd.

Draught @ Mig & Ølsnedkeren. Pours slightly hazy yellow with a white head. Aroma of light sourness, light malt, little whisky, peat, tart fruit, littl spice. Flavor is sour, peaty, malt, ginger, tart fruit, spice. Medium body, average to lively carbonation, tart and acidic finish. Not even fun. 010620

Taster on Weathered. Appearance: a bit hazy golden wi5h a white head. Aroma: not very pleasant, kind of medicinal and fruity with peat notes. Taste: same. Overall: omg, I did not like it at all.

Poured from the tap. Slightly hazy yellow with white head. Ginger with mild lemon and honey, peat finish. An odd, yet very satisfying cocktail-like beer.

On draught at Tønne, Leicester. Mid- to dark gold, slightly hazy with a small ring of slightly scummy white head. Ginger and antiseptic I'm the aroma. Sour taste with notes of cider vinegar and loads of ginger. Not being a fan of ginger in general and especially in beer, I was always going to struggle with this one. It tastes like something your friend's mad auntie whips up for you when you have the flu. Hiwever, it's drinkable, and I'd love to try the cocktail that inspired it.

Smoky sour citrus. Clearish gold with a decent white head. Soured and smokey with some nice balancing sweetness. Nice.

330 ml bottle. Pours a clear amber/gold with light head. Aromas of burnt garbage, fruit, and toasted malts. Flavors of smokey peat (and iodine), hard to determine fruit, maybe come citrus, maybe some ginger and sharp toasted malts. A bit of a mess. Why would an importer bring in this beer as a representation of the brewery?

Bottle at cropredy 2019 Thursday... Light hazy amber.. Thin white lacing.. Big fruity smoke.. Soft spicy sweet ginger.. Tart sharp sour whisky... Really not sure about this at all. Though clearly what it's meant to be

Golden beer, the barrel aging dominates the aroma and is distinct in the flavour, along with ginger and spice with tart fruit and hop, and a warm boozy finish. A sour with Islay is a really nice blend.
