A beer inspired by a cocktail. Australian bartender Sam Ross created several enduring drink recipes whilst at Milk & Honey in New York, most famously the Penicillin Cocktail: a smoky, spicy mix of Scotch, honey and ginger and lemon. We have deconstructed these ingredients from the cocktail and put them all together to brew a beer we have been wanting to make for a very long time.
Dr Todd is our riff on the Penicillin cocktail. The end result is an Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger, some lactose sugar and aged in barrels with British Black Bee honey and finished with more ginger and lemon zest. The Penicillin was inspired by the Hot Toddy, invented by the revered Dr Robert Bentley Todd.

Draught at the Brew Dock. Smells medicinal. Cloudy yellow colour. Small white head. Strong acid bite, but also too medicinal. Has a little sweetness and perhaps some spices like nutmeg. Good acid burn, but a but too much for me. I like some aspects of this beer, but I am not going to finish it.

Bottle from the Brewery online shop, as Dr Todd 2019. Pours murky golden with no head. Aromas of honey, ginger and sour lemon. Faint barrel notes. Taste is all islay whisky up front. Tcp, iodine, peat, then some lemon and faint honey. Medicinal.

330ml bottle at 9.7%. Pours dark gold with a small head. Aroma is sweet, peaty smoke, slightly ashy sour. Taste has sour peaty smoke to start. Sour peaty finish, touch of woody honey.

Bottle. Probably from Beer Central, Sheffield. Clear amber colour. No head. Nose has sticking plaster. Savoury smoke. Plastic. Gammy bandages. Linament. Stinks, to be honest. Taste is sweet and sticky. A bit sour. Mouthfeel is oily and greasy. Fine carbonation. Sticky sweet and horrible tartness to finish. Holy shit.

Bottled. A hazy golden beer with a beige head. The aroma has notes of smoke, malt, caramel, and ginger. The flavor is sour with notes of lemons, ginger, smoke, malt, and caramel, leading to a bitter finish.

Bottle@Lars tasting - Light hazed golden pour with a thin white head. Smoked and sweet malty with some notes of honey, some ginger, herbal notes in play, pleated and sweet, medium body, smoked malty and herbal fruity close.

Sample from 33 cl bottle. Clear golden colour with a thin white head. Tart fruity aroma with lemons, peated notes, vinegar, hay and sweet fruits. Taste is sour. Medium bodied. Sweet, peated finish. This is for the acquired taste.

Gylden klar med lavt hvitt skum. Stinker røkt korn og smaker det samme. Kun i små mengder for meg. Noe sursyrlig bær i smaken.

16th April 2018, at the monthly beer exchange in Chez Sophie, Shrewsbury. Cheers Mike for this 330ml bottle, even if it reminded me of TCP (antiseptic). Dirty golden pour, white affair on top. Ginger and Honey, then Peat smoke, it wasn't to my taste at all and my nose wasn't very impressed either. I would have to be dying to take Dr Todd's medicine again!
