Spicy + Smoky + Honey + Ginger + Barrels

A beer inspired by a cocktail. Australian bartender Sam Ross created several enduring drink recipes whilst at Milk & Honey in New York, most famously the Penicillin Cocktail: a smoky, spicy mix of Scotch, honey and ginger and lemon. We have deconstructed these ingredients from the cocktail and put them all together to brew a beer we have been wanting to make for a very long time.

Dr Todd is our riff on the Penicillin cocktail. The end result is an Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger, some lactose sugar and aged in barrels with British Black Bee honey and finished with more ginger and lemon zest. The Penicillin was inspired by the Hot Toddy, invented by the revered Dr Robert Bentley Todd.

330ml bottle @ monthly tasting, Chez Sophie, April 18, courtesy of Mike. Thanks Mike. Pours a misty gold, small white head. Aroma sees the peaty notes overpowering with underlying honey and ginger. Tastes like a blend of everyone's drinks at a teenage house party with added washing up liquid, flash, whisky and whatever was in the spice cabinet. Perhaps if it wasn't aged in an Islay cask there could've been hope for this beer.

Fascinating -- smoky, funky, lots like a penicillin

Bottle at Wild Beer WW. It pours hazy orange with a quickly dissipating head. The aroma is medicinal, ginger, spicy, honey cake, peaty whisky and hot toddy. The taste is dry, bitter - sweet, oily, tangy honey, ginger, tart, tangy, sherbet, oily, gooseberry, lemon peel, rather medicinal, whisky, light astringency and warming alcohol with a dry, spiced finish. Medium body and moderate carbonation. A fun beer equivalent of hot toddy.

Bottle at Wild Beer - Bristol. Pours mostly clear orange with minimal head. The nose has some peat, lemon, white grape, lime. Medium sweet flavour with more dry, smokey peat, a little citric bite, lemony tartness. Medium to full bodied with spritzy carbonation. Lightly warming finish, some more lemon, lots of peat, citrus, sourdough bread, mild acidity. Pretty novel. Comes together alright. Big peat, which I like.

Dan's Stag. Wild Beer taproom. Bottle. Hazy orange beer, a few cream colour bubbles. Palate is light and reasonably minerally crisp. Smoky peat kick off followed by slightly sour orange and mild fruity ginger. Some citric zip on the back end, trace of lemon sherbet. Thoroughly odd but not hating it.

Bottle at home. Pours deep orange, nose is peaty, funk, lemon, ginger, taste is more of the same, sweet honey, zesty citrus, a little on the medicinal side but pretty good.
