Up until this creation, our goal was to focus on what we call "tart" beers - ones that incorporate acidity but are not dominated by it. We’ve grown comfortable with this approach, and our quest for a house flavor has been fruitful. Cellar Palette, a sour brown ale with raspberries, marks a different path for SARA. Longer aging times in wine barrels, more robust use of brettanomyces and bacteria, and creative blending all come together to form this mouth-puckering, but balanced, wonder. For those of you fortunate to have Cellar Palette too, we say "Sante!"

Bottle thanks to Michael. Pours a hazy amber with small beige head leaving spotty lacing. The aroma is leather, wood, raspberry, funk. Slick body, raspberry, funky, oak, balanced acidity, enjoyed this.

Where: Sweet & Sour 2016.
Appearance: Hazy brown colour with a minimal head.
Aroma: Oak, raspberries, tart, vinous, raisin.
Body: Light to medium body, low to medium carbonation.
Flavour: Fruit, tart, sour, raspberries, raisin, vinegar, vinous.

Sadly way too sour wich hides any complexity, malt base and jammy fruits. Nice, but too sour as mentioned.

Bottle - Soured nice malts, vinous vinegar. Clearish gold copper with a decent light white head. Nice soured malyts, touch of vinegar and cherry notes. Nice tart and a bit of a dry finish. Balanced sweet and tart.

Bottle shared at Casa de Jose during RBWG 2016. Pours clear copper-red with a slight, creamy off-white head. The nose has nice leathery tart berries, hints of acetic acid. Light sweet flavor with pleasant dried out, tart and leathery berries, a little woody dryness, some earth, citrus. Light to medium bodied with fine carbonation. Crisp, dry and fairly refreshing on the finish, with relaxed acetic bite, more tart berries. Great balance, nuance. Wonderful stuff.

Bottle split at and big thanks to Joe T, 04/02/16. Rich reddish amber with a moderately appointed light beige swirl. Nose is funky red berry, straw, tarte berry, raspberry tarte, straw, barnyard, wood must. Taste comprises damp wood, cherry skins, tangy berry, fruit balsams, wood must, vanilla oak. Medium bodied, fine carbonation, tarte funky berry finale with rising acidity and a puckering curtain call. Solid.

Bottle at JoeT?s cat cabana. Thanks RateBeer CEO. Light hazy amber liquid with medium off-white head. Aroma of lemon, apple skin, raspberries, mango, red berries, wood, lychee and light grain. Taste is very light sweet and medium sour with notes of lemon, mango, lychee, red berries, apple skin and mineral. Medium bodied with medium carbonation. Wow. This is great. Very complex.

The beer is reddish brown in color. Small off white head. Big raspberry aroma. Mild funk and lemons. A little bit of vinegar. Medium tart. Big on raspberries. Some oak. Some stone fruit. A little stronger than I’d like.

Aroma is rather fruity with quite a bit of raspberry character. Some light malt notes of caramel and toasted bread. Low acidity in the aroma. Some cherry and other berry notes. Pours a cloudy, burnt amber brown with a small, moderately thick, tan head with decent retention. Small lacing and faint legs. Flavor is very acidic with some nice berry, cherry and cassis notes. Light citrus notes and a touch of acetic character. Medium light bitterness and light oak notes. Light malt notes of toasted bread and dark caramel with faint chocolate. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol alcohol warmth. Overall, a pretty nice fruited sour beer. Lots of fruit notes in the aroma and decent notes in the flavor. Acidity is high but not over the top.

Bottle, shared among friends, thanks! Pours cloudy reddish chestnut with a small tan head that dissipates quickly leaving good lacing. Aroma is very raspberry jammy, some faint funky notes, a bit of dark sugar, oak tannins. Flavor is kinda sweet and just a bit tart, lots and lots of raspberry in this one, jammy and yummy with a malty backbone with toffee and other dark sugars. A bit of funk for complexity, and definite vinous barrel notes present as well. Medium plus, creamy body. Very very good.
