Julianna, who builds ecstatic choirs by looping and layering her voice, helped choose the ingredients for Rosabi and visited coastal Delaware to brew a test batch.
Citrusy Simcoe and Centennial feed Julianna’s love of hops, and the star of the show is her go-to ingredient: wasabi. What’s hoppy? … Wasabi. The Japanese root adds bittering and herbal notes similar to hops, with its subtle heat creeping in after the kick of carbonation.

750 ml bottle into signature tulip glass, bottled on 5/15/2014. Pours fairly crystal clear deep orange amber color with a 2 finger dense light khaki head with good retention, that reduces to a nice cap that lingers. Nice dense soapy lacing clings on the glass, with a moderate amount of streaming carbonation. Aromas of spicy/earthy wasabi, grapefruit, orange zest, citrus peel, caramel, bread, herbal, floral, grass, light pine, and herbal/wasabi earthiness. Nice and unique aromas with good balance and complexity of citrus/grassy hops, wasabi, and dark/bready malt notes; with solid strength. A bit too strong on the wasabi in the aromas. Taste of grapefruit, orange zest, citrus peel, caramel, bread, earthy wasabi, herbal, floral, grass, light pine, and herbal/wasabi earthiness. Fair amount of pine/grassy bitterness and wasabi spice on the finish; with lingering notes of grapefruit, orange zest, citrus peel, caramel, bread, earthy wasabi, herbal, floral, grass, light pine, and herbal/wasabi earthiness on the finish for a good bit. Very nice complexity and robustness of citrus/grassy hops, earthy wasabi, and moderate dark/bready malt sweetness; with a great malt/hop/wasabi spice balance and zero cloying flavors after the finish. Medium carbonation and body; with a very smooth and lightly creamy/sticky mouthfeel that is nice. Alcohol is well hidden with only a slight warming present after the finish. Overall this is a very nice spiced imperial pale ale. All around good complexity and balance of citrus/grassy hops, earthy/spicy wasabi, and moderate dark/bready malt sweetness; and very smooth to drink for the ABV. A very enjoyable offering.

A little odd. Not sure the wasabi is a good thing for a beer. Pours Rosie with OK head and lacing. Some citrus hops tempered by wasabi. Random. Tap at brewpub in Rehoboth Beach.

Amber and copper coloured body with a touch of a ruby glow and a nice, rich, ugly-lacing four centimetre tall tan head. Aroma of very pungent earthy and nutty hops with a strong bitter metallic and astringent, medicinal smell as well - not too great in the nose. Medium-bodied; Some heat up front from wasabi and horseradish with a little rice and odd grain flavour right behind. Aftertaste shows the slightest bit of hops, some syrupy and fruity sugars and a strong bitterness stemming from the rice and the wasabi. Overall, a pretty poor beer, but that was almost to be expected. Another ’neat’ concept from DFH, but of course, another failure. Definitely not worth trying this show beer unless you are out to try everything from the brewer, but if you are doing that, you are missing way too many other real beers. I sampled this 75 cL bottle purchased from Costco in Arlington (Pentagon City), Virginia - yes my Costco has a ’bomber’ section! for US$7,79 on 12-July-2014 sampled just three days later on 15-July-2014 at home in Washington.

Bottle thanks to my buddy Chad in Richmond. Thanks! Poured a clear amber color with a small off-white head. Aroma was some light pils and light citrus hops. Aroma was something I couldn’t quite place, some strange herbal notes - raddish? wasabi? Flavor was light herbal notes - vegetal wasabi character. Interesting. I want to hate this one, but I can’t...

Bottle from Bert’s Pours a clear orange amber color with a huge long lasting creamy white head. Aromas of spicy earthy resinous hops with a slight herbal feel to it that I assume is the green paste in question. Hints of bready malt deep underneath. The flavor is more earthy and herbal with a nice taste of wasabi/horseradish but very little heat. Mild bready caramel malt to back it up. Medium body with a moderate level of carbonation. Decent enough pale ale with some nice wasabi flavor, but I really wanted some heat.

750ml bottle pours a clear amber with some white head. Nose is odd, raw parsnip, raw horseradish root, very earthy, lots of breakfast radish too. Flavor is odd, some dried orange peel and then tons of shaved raw parsnip, a bit crackery, some malt. Herbal finish. Strange and terrible. Tastes like raw grated parsnip.

On draft at the DFH Alejouse in Falls Church, VA. Pours a clear orange amber with an off white head. Aroma of oranges. Flavors of tropical fruits with some subtle wasabi flavors, especially in the finish.

750ml bottle shared by Anndiesel. Filtered amber-copper-orange. Creamy, soapy off-white head. The wasabi is subtle, and really complements the hops surprisingly well. Kind of a hoppy amber strong ale at the end of the day more than an imperial pale ale. Pretty solid, one of the better, balanced DFH beers I’ve had in awhile. This is a great addition to their line up, as this covers the Amber/Red category quite well...would be nice to see this in four packs.

Bottle. Pours clear amber orange with white head. Nose/taste of caramel malt, spicy wasabi, dried fruits and grapefruit peel. Medium body. No heat in finish, just the spicy earthiness of wasabi. Dry finish. One of their better experiments as of late.

Pours deep gold into a tulip. Off-white head with medium retention recedes leaving dripping spots. Earthy caramel aromas. Sweet caramel and bread upfront turning to mild cooked vegetable in the medium length finish. No wasabi, no heat; more like cabbage. I don’t like cabbage.
