The vivid rose hue of this imperial Pale Ale comes from a combination of Munich and Caramel malts and a touch of red rice from Louisiana, birthplace of musician and collaborator Julianna Barwick (read all about that collaboration here!).

Julianna, who builds ecstatic choirs by looping and layering her voice, helped choose the ingredients for Rosabi and visited coastal Delaware to brew a test batch.

Citrusy Simcoe and Centennial feed Julianna’s love of hops, and the star of the show is her go-to ingredient: wasabi. What’s hoppy? … Wasabi. The Japanese root adds bittering and herbal notes similar to hops, with its subtle heat creeping in after the kick of carbonation.

2014 bottle...Cloudy copper, on first inspection seems like a normal pale ale, complete with bitter hops, grapefruit....I’m not experiencing a lot of heat here but It does compliment Asian food quite well...I may be a bad judge for heat in this beer, as I put a lot of wasabi on my sushi :).....good stuff though...I get the wasabi flavor minus the heat!

Bottle: Poured a deep amber color ale with a nice large foamy head with excellent retention and some lacing. Aroma of citrus hops is pretty dominant with some lightly caramelized malt. Taste is also dominated by strong citrus hoppy notes with some light spicy undertones and some toasted malt notes. There is also quite a bit of residual sugar in this beer. Body is full with good carbonation. I was expecting the beer to be quite a bit more spicy but the wasabi notes were quite subtle.

Lightly hazy amber beer, small pale cream colour head. Palate is light, dry and crispy. Thin dry malts, perhaps a little sweetness well buried. Hops are floral with tangy marmalade. The Wasabi is well integrated and provides another dimension to the beer without re-arranging the nostrils as the raw product is apt to do! Finishes dry with a touch of pine. Slightly dry but always drinkable and goes down easy for an 8% beer.

Bottle. Light hazy amber liquid with medium off-white head. Aroma of pine, spices, citrus, toffee, bell pepper and light chili. Taste is light sweet and light bitter with notes of pine, toffee and horseradish. Medium bodied with medium carbonation. Decent enough.

Capped 750 from Total Wine in Sacramento, CA. Pours orange gold with a slight off-white head. Aroma of citrus and something pungently spicy. Med body. Flavor is wasabi which isn’t very hot at first. Strange this. Seems a bit sweet, then the wasabi kicks that apart. It is very different, and I’d have been satisfied with 5 oz., but I’ll do the bottle. It’s finishing very mildly wasabi.

Bottle. Pours a hazy amber with a tan head that dissipates to the edges. Aroma has a good amount of earthy grass and grains with a bit of underlying mustiness. Flavor has a bit more of a fresh grass notes with some sweet grains and an earthiness underlying.

750 ml bottle. Aroma is floral, herbal, peach, an odd aroma I can only guess is the wasabi. Smells a little old, dammit; bottled on 5/23/14--guess I should have picked up a bottle of this sooner. Pours hazy burnt orange with a medium beige head with great retention. Taste is bittersweet with herbal, citrusy, pineapple, and alcohol in flavor along with that unique flavor that must be the wasabi; no heat, which I really wanted in this. Tastes past its prime. I was really looking forward to this, and I’m sure it’s much better fresh.

750 mL bottle from Beer Run, opened 6/12/14. Seems viscous coming out of the bottle and features a dense tan head. Good head retention, solid lacing, clear and berry colored. Aroma of peppery horseradish, wasabi I guess, resin and citrus hops and some earthiness. The taste is citrus, resin hops, pale malt, strong wasabi finish, which comes across almost like potato chips. Medium bodied, low carbonation, strong lingering bitterness, not terribly well balanced.

Apple and orange peel. Hazy orange, enormous yellow head, nice lace. Very oaky orange peel flavor. Medium body, light carbonation, alcohol not noticeable. No hint of wasabi or rice unless it presents itself as oak. Surprisingly un-weird for Dogfish Head, just a really good APA.

Pours hazy orangish color with off white head. Fruity hop and caramel aromas with a hint of wasabi. Similar flavors though I’m not really getting any wasabi taste or heat. Medium body with average carbonation. I was disappointed in this beer. I was hoping for some in your face wasabi flavor and heat.
