The "Première" barrel fermented is an exceptional beer that benefits from triple fermentation and extended maturing in barrels. Unfiltered, unpasteurised, this beer has an incomparable rounded, wooden flavour.

Fermented in French and American oak barrels.

23 February 2019. (Tasting formerly known as) RBBWG. Cheers to all, thanks Kraddel for the hospitality! Hazy red with a lasting, foamy, pinkish off-white head; little lacing. Intense aroma of candied plum, dried banana, caramel, green tea with sugar, vanilla, brioche, red berries, fruit jenever, perfume. Taste is medium malty sweet, notes of toffee or caramel next to dried banana & red apple on a soft brioche-like malty base; light to medium herbal bitter middle has green tea, subtle clove & pepper and a nutty & toasty edge. Dryish, herbal hoppy finish, nutty, more caramel & dried fruits, some warming gin-like alcohol. Medium body, oily-creamy texture, fizzy carbonation. Not a 'sheer masterpiece' but I cannot help but love this!

F: huge, off-white, long lasting. C: dark coppery, bit hazy. A: fruity, woody, prunes, caramel, dried fruits, bit vanilla, bit spicy, banana, bit bready, pear. T: malty, woody, fruity, dried fruits, light woody tannins, banana, vanilla touch, the “woodiness” is really impressive in the nose and the taste, caramel, herbal and dry on the palate, bit warming alcohol, not so complex as BSA BA series but really enjoyable beer for sure, medium to full body, lively carbonation, beer # 3900, 75cl bottle from Poteaupré Espace Chimay.

25/VI/18 - 75cl bottle @ Cultuurcafé's Trappistenweek (Berlare) - BBE: 2022 (2018-803) Thanks to Ama (Ronny) and Erwin for sharing the bottle!

Little cloudy red amber brown beer, huge creamy and ever growing beige head (even in the glass), very stable, bit adhesive. Aroma: malty, whisky notes, alcohol, vanilla, pretty oxidized, some peat, mildew, apples and pears, some thick apple syrup, overripe banana. MF: pretty lively carbon, medium to light body. Taste: bit malty, some ripe banana, even overripe, alcohol, caramel, bit medicinal, lots of yeast. Aftertaste: breakfast cereals (Smacks), honey, overripe banana, little bitter, some dried fruits, bit of chocolate, malty, alcohol, bit messy...

After the series of barrel aged Grande Réserves, Chimay now applied the same idea to their classic dubbel, the Rouge, or indeed 'Première' in large bottles; apparently only sold at the abbey shop, at least for now. Many thanks to Kevin from Cultuurcafé Berlare, probably the first pub in this country to put it on the menu. Initially towering high, lacing, densely creamy, regular, pale yellowish beige, foamy and slowly receding, but very stable head on a hazy, chestnut-brown-hued translucent ruddy bronze beer with ochre-ish edges. Aroma combines the familiar Chimay esters with the wood, giving impressions of ripe blue plum, candied fig, stewed apples, caramel candy, dry tree leaves, dried banana, ginger powder, hay, dry wooden barrel, hints of cloves, green pear, lightly toasted brown bread, lavender soap, pecan nuts and a faint touch of smokiness far away in the background. Rounded, fruity onset, peach, fig, medlar and dried banana slices, sweetish with a sourish edge, less sweet-fruity than the 'blue' versions; spritzy carbonation, a tad numbing at first (not surprising seen the enormous head development, perhaps) but calming down in the end, supple, lean and somewhat soapy mouthfeel. Smooth caramelly malt body, nicely bready, sweetish with a mildly bitterish toasty edge, more bitterness in the finish as a herbal, earthy hoppiness sets in - highlighted by the woody tannins, adding a relatively mild but well-measured woodiness; ends with a palpable, yet non-offensive glow of 'jenever'-ish alcohol and lingering maltiness and yeasty fruitiness. Interesting beer, definitely a step upwards compared with regular 'Première' by adding a bit more character, more bitterness and of course the woodiness, though in all, the latter aspect remains soft and gentle. As expected, not as spectacular as its 'Grande Réserve' equivalents, but a lovely addition to the Belgian trappist range indeed.
