Hey. So Howard didn’t pay for the hotel in Chicago.

So I’m up in the spring hill suites on my own dime for tonight and ... who knows what fresh hell tomorrow will bring.

Seriously though, the front desk people at Spring Hill in Chicago are fantastic.

On tap at Haymarket - Chicago, pours a clear golden blonde with a small white head. Aroma is full of crunchy grassy hops, some vegetal notes and crisp crackery malt. Flavour is crisp, with grassy hops, vegetal notes, and crisp crackery malt. Herbaceous and dry finish. Pleasant.

Pour is a clear gold with a long lasting foamy white head. Aroma is bready malt and maybe a bit of metal. Flavor is more cracker malt and a bit of grassy saaz hop. Nothing special but still a decent chugger.

12 ounce can into lager glass, canned on 3/12/2019. Pours fairly crystal clear medium golden yellow color with a 1 finger fairly dense and fluffy white head with fantastic retention, that reduces to a small cap that lingers. Nice spotty foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big lemon, cracker, white bread dough, lightly toasted biscuit, wood, peppercorn, and herbal/floral/grassy earthiness. Damn nice aromas with great balance and complexity of pale malts and citrus/earthy hop notes; with great strength. Taste of big lemon, cracker, white bread dough, lightly toasted biscuit, wood, peppercorn, and herbal/floral/grassy earthiness. Light-moderate pine, herbal, woody, floral, grassy, peppery bitterness on the finish. Lingering notes of lemon, cracker, white bread dough, lightly toasted biscuit, wood, peppercorn, and herbal/floral/grassy earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of pale malts and citrus/earthy hop flavors; with a great malt/bitterness balance, and no lingering hop astringency after the finish. Fairly crisp/clean finishing. Very clean on lager flavors, with minimal fruity/yeasty notes present. Moderate increasing dryness from lingering bitterness. Medium carbonation and light-medium body; with a very smooth, moderately bready/grainy/sticky, and fairly resinous/rindy balanced mouthfeel that is great. Zero warming alcohol as expected of 5%. Overall this is an awesome German pilsner. All around awesome complexity, robustness, and balance of pale malts and citrus/earthy hop flavors; very smooth and fairly crisp/clean/refreshing to drink, with the modestly bitter/resinous/drying finish, not overly aggressive. Very flavorful and not watery for the ABV. Perfectly balanced clean pils malts and earthy noble hop showcase. Minimal residual sweetness with crisp resin dryness. A really enjoyable offering, and impressive spot on style example.

On tap at Haymarket Chicago. Clear gold colour lasting white head. Distinctive German hop aroma and flavour. Darn it. That's a fine pilsner. A little bready yeast aroma. Excellent hop and just the right balance. Superb.

Keg at the brewpub. Pours clear pale yellow with a creamy white head. The nose has floral hops, biscuits, hay. Light sweet flavour with nice grassy bitterness, crispy biscuits, more hay. Light bodied with average carbonation. Crisp and bitter on the finish, more bitter grass, pale biscuits. Great lager.

At the brewery, December 2015. Gold color. Thin head. Surprisingly good brewpub pils. Crisp and dry, Saaz stand out for me, and I might have called this a Czech pils based on all the hops. A little sweetness at the end, which I did not like. Overall it is good.
