Hitachino Nests most popular beer is their White Ale, so it was a natural starting point for this collaboration. We opted to add hops (as we are known to do) and made a white IPA based on the flavor profile of the White Beer. Kiuchi suggested incorporating the use of yuzu (a small Asian citrus fruit) into the brew, and we found the bright lime-like tartness perfectly accentuated the flavors of hops and the spicy notes of the classic witbier yeast.

Bottle: Fairly clear, bubbly, lighter yellow-gold with a white head. Aroma is tropical, pink grapefruit, orange-peel....a little melon-like note. Taste is just about sweet-bitter neutral..... Wheat malt, mixed citrus, a touch peppery..... Very pleasant, and light to drink. Really good.

12 ounce bottle. Large foamy white head. Mild sweet, citrus aroma. Bitter, tart citrus malt flavor. Peppery hops in middle. Crisp, dry hoppy finish. Notes of lime peel and black pepper.

White grape, lemon, coriander aroma. Clear amber, thin head. Orange and lemon, white grape, spearmint. Grass finish. Light body, moderate carbonation, slightly dry. Plenty of Belgian character.

12 oz bottle poured. A clean and shiny golden pour with a lasting fizz head. A ton of spicy floral notes, coriander in the aroma. Flavor is a close match. Cool constant. Coriander, and endless floral notes. Hop character present, but a little buried. A late cool citrus linger. A really unique IPA for sure. Fun try.

Tap at Takanoya. Hazy gold with a low fine head. Nose is wheat, tropical fruits, citrus. Wheaty citrus flavor, tropical, very drinkable. The yuzu is not all that noticeable--blends nicely with the hops, which is how I like it.

Bottle. Yuzu (peach/orange/lime), wheat malt, and lime peel aroma. Bright yellow with giant white head. Moderately sweet yuzu, wheat malt, and moderately bitter lime peel flavor. Good body and balance. Very nice.

Tap at CBB Garden in Osaka. Light gold and lightly cloudy. Candyish yuzu aroma. The taste is perfumey, floral, wheat and fruits. Alright.

Bottle. A- Lemon balm, floral, coriander. A- Gold color, clear liquid, white head. T- Lemon, floral, medium bitterness, coriander, subtle banana. P- Medium body, average texture, average carbonation, slightly bitter finish. O- The yuzu does not add a tart or sour note I thought it might. Instead it comes across as lemon balm and floral like. A unique take on the style and pretty tasty, but still not what I would have expected.

Pour is a hazy dull yellow with a large white head. Aroma is unbaked bread dough and some citrus. Flavor is a citrus tartness and bitterness with some fruitiness I can’t place but I’m guessing it is yuzu. This beer is flavorful without the abundance of hops. A very fruit forward beer that did not need a lot of flavorful hops.
